The method, step by step
Heat your milk slowly to about 85°C (185°F), stirring so it does not scorch on the bottom — just below a boil, when the surface shimmers and steams. Take the pot off the heat, then stir in the vinegar a little at a time. Within seconds the milk breaks into soft white curds floating in thin, pale-green whey. If it has not fully separated after a minute, add a splash more acid.
Let the curds rest for five to ten minutes, then ladle them into a colander lined with cheesecloth. Rinse briefly with cool water to wash off the acid tang, salt to taste, and either eat the cheese soft or press it under a weight for firm, sliceable paneer. Less pressing gives ricotta-like crumbles; more pressing gives a block you can cube and fry.

The milk-to-vinegar ratio explained
The working ratio is about one tablespoon of 5% white vinegar per litre of milk, which scales to roughly a quarter cup per gallon. That is enough acid to drop the milk’s pH to the point where casein protein coagulates, without leaving a harsh vinegar flavour behind. The calculator applies this ratio to your volume so you are never guessing at the pour.
More acid is not better. Once the whey runs clear-green the curds have already formed, and extra vinegar only tightens the protein further, making the cheese squeaky, dry, and sour. If anything, err slightly under and add more only if separation stalls — you can always add a splash, but you cannot take it back out.

Choosing your milk and acid
Whole milk gives the best yield and the richest cheese because fat and protein are what you are capturing. Reduced-fat or skim milk works but returns noticeably less cheese and a drier, chalkier curd. The one milk to avoid is ultra-pasteurised (UHT): its proteins are heat-damaged and often refuse to curdle no matter how much acid you add.
Any food-grade acid will curdle milk. White vinegar is cheapest and most neutral; apple cider vinegar and lemon juice both work and lend a subtle flavour. Whichever you choose, add it off the heat — boiling the milk with acid in it makes tougher, rubberier curds than a gentle curdle just below boiling.

Troubleshooting your batch
If the milk refuses to separate, first suspect UHT milk, then not-hot-enough milk — it needs to be near boiling. Add acid a splash at a time until you see clean curds. If your cheese comes out squeaky and dry, you likely used too much acid or pressed too hard; ease off both next time.
A batch that tastes sharply of vinegar just needs a quick rinse under cool water after draining. And if the yield feels low, check your milk: low-fat and UHT milks both give less cheese. Weigh your first successful batch and note the milk you used, and every future make becomes predictable.
