How much rennet do I need for cheese?
The honest answer is that rennet is dosed by enzyme load against milk volume, not by tradition. Once you know the cheese type and the rennet form, the rest is arithmetic. A single-strength liquid rennet at one-quarter teaspoon per US gallon, or about 0.33 ml per litre, is the long-standing baseline for hard cheese. Soft cheeses like fresh mozzarella or paneer use roughly half that. Semi-firm sits in between.
Tablet rennet is calibrated by tradition rather than weight. A standard tablet usually sets two US gallons of hard cheese, so half a tablet for a gallon and a quarter for half a gallon. Powdered rennet is the most concentrated form and the easiest to overshoot — about 0.05 g per four litres of hard cheese is a fair starting point for double-strength powders, but the brand label always wins.

Liquid vs tablet vs powdered rennet — what is the difference?
All three forms coagulate milk. The choice is mostly about how you want to store and measure it. Liquid rennet is the easiest to dose in small batches because a pipette or a drop count gives you fine resolution. Single-strength liquid is what most beginner recipes assume; double-strength is half the volume for the same effect.
Tablet rennet stores well and breaks into clean fractions. One standard tablet sets two US gallons of hard cheese, which makes a five-gallon hobbyist batch easy to dose without a scale. Powdered rennet is the most concentrated form — a few hundredths of a gram do the work of a millilitre of liquid — and needs accurate scales unless you trust your brand's tiny pre-measured packets.

Soft cheese vs hard cheese — why the rennet dose changes
Soft cheeses want a delicate set. A lower rennet dose gives a gentler curd that drains slowly and tastes mild, which is exactly what ricotta, paneer, and fresh mozzarella style cheeses need. Push the dose toward hard-cheese levels and the curd turns rubbery — fine for halloumi, less ideal for queso fresco.
Hard cheeses ask the rennet to do real structural work. The curd needs to break cleanly, hold its shape under stirring, and survive cooking or pressing. That is why hard-cheese recipes use roughly double the soft-cheese dose. Semi-firm cheeses like feta and halloumi sit in the middle by design.

Animal, vegetable, and microbial rennet — does the source affect dosing?
For dosing purposes, modern home-cheese rennet brands try to land on the same effective strength regardless of source. Animal rennet (calf) is the traditional reference. Vegetable rennet, which in practice is usually microbial-derived, dominates the home-cheesemaking market because it is vegetarian and stable in liquid form. Microbial rennet behaves like liquid or powdered rennet at standard doses; what changes is the label, not the math.
Where source can matter is shelf life. Liquid animal rennet kept in a warm cupboard fades faster than a sealed microbial tablet. If a batch refuses to set with a known-good dose, the rennet age is a real suspect.

How long should rennet take to set? The clean-break test
The standard target is a clean break in 30 to 60 minutes at 32 to 35 °C. "Clean break" means you can slide a flat blade under the curd, lift, and the surface splits straight across instead of smearing. That is the moment the curd is ready to be cut, not before.
Cooler milk drags the timing out. A jug at 28 °C may need 90 minutes for the same clean break that 33 °C would deliver in 40. Most failed batches are not failed rennet — they are cool kitchens. If a batch is suspiciously slow, take the milk temperature first and consider returning the pot to a warm water bath rather than adding more rennet.

Why did my curd not set? A troubleshooting checklist
The first suspect is ultra-pasteurised milk. UHT processing damages the proteins so thoroughly that no rennet dose recovers them. If your supermarket carton says UHT, switch to standard pasteurised milk and try again. The second suspect is temperature. Milk under 28 °C will refuse to set even with the right dose; warm the pot in a water bath and re-check before reaching for more rennet.
After milk and temperature, the next suspect is dose. The calculator above tells you the target. If you used less, increasing the dose on the next batch usually fixes it. Finally, check the rennet itself — liquid rennet stored at room temperature for years can lose strength quietly. A fresh bottle is often the cheapest fix.

Can I use too much rennet?
Yes, and the side effects are easy to spot. Overdosed rennet sets the curd very quickly, often in under 20 minutes. The curd then tends to feel rubbery rather than springy, and the finished cheese carries a bitter aftertaste that does not fade with age. Once a batch tastes bitter at the make day, ageing will not rescue it.
The fix is straightforward: cut the dose on the next batch and let the milk temperature do the work it is supposed to do. Rennet should not be the variable you push around for speed. If a batch is slow, fix the temperature first.

Citric-acid mozzarella, paneer, and ricotta — when you do not need rennet at all
Not every cheese needs rennet. Ricotta is set by acid and heat — usually vinegar or lemon juice into hot whey or whole milk. Paneer is the same approach with whole milk and lemon juice. Citric-acid mozzarella is the most famous beginner recipe and uses citric acid plus a tiny rennet dose; some quick versions skip the rennet entirely and rely on stretching.
