How Vinegar Is Made (and How to Make Vinegar at Home)

Vinegar is made through a two-stage fermentation. Yeast converts sugar to alcohol, then Acetobacter bacteria convert the alcohol to acetic acid. This guide covers every method, from the ancient Orleans process to making apple cider vinegar in your kitchen.

Vinegar is one of the oldest fermented products in the world, and its production is surprisingly simple. Every vinegar, from balsamic to plain white distilled, follows the same basic biology: yeast turns sugar into alcohol, then bacteria turn that alcohol into acetic acid. The difference between a mass-produced gallon jug and an aged artisan bottle comes down to method, ingredients, and time. The two-stage process

Vinegar production requires two separate fermentations, each driven by a different microorganism.

Stage one: alcoholic fermentation Yeast (typically Saccharomyces cerevisiae or wild yeasts) consumes sugar and produces ethanol and carbon dioxide. This is identical to winemaking or brewing. The sugar source can be fruit juice, grain mash, honey, or any fermentable liquid.
Stage two: acetic acid fermentation Acetobacter and Gluconobacter bacteria oxidize the ethanol into acetic acid. Unlike alcoholic fermentation, this stage requires oxygen. The bacteria work at the liquid surface or wherever air contact occurs.

The chemical equation for the second stage is simple: ethanol + oxygen becomes acetic acid + water. In practice, roughly half the alcohol (by weight) converts to acetic acid. A wine at 10% ABV produces vinegar at roughly 5% acidity.

You can skip stage one by starting with a pre-made alcoholic liquid like wine, hard cider, or beer. Most home vinegar makers take this shortcut because it saves time and produces more consistent results.

Acetobacter and the mother of vinegar

Acetobacter is a genus of acetic acid bacteria found naturally on fruit skins, in unpasteurized alcoholic beverages, and in the air around fermenting liquids. These bacteria are obligate aerobes, meaning they need oxygen to survive and work.

The mother As Acetobacter colonies grow, they produce a mat of cellulose that floats on the liquid surface. This is the mother of vinegar. It is a biofilm that gives the bacteria structural support and keeps them at the air-liquid interface where oxygen is most available.
Appearance The mother looks like a rubbery, translucent disc. It can be thin and smooth or thick and wrinkled. Color ranges from pale tan to dark brown, depending on the base liquid.
Using a mother as a starter Adding a piece of mother (or a splash of raw, unpasteurized vinegar) to a new batch introduces a strong colony of Acetobacter and speeds up the process significantly. Without a starter, wild bacteria will eventually colonize the liquid, but it takes longer and is less predictable.

The mother is harmless and edible, though not particularly pleasant to eat. Commercial vinegar is usually filtered and pasteurized to remove the mother for aesthetic reasons. Raw, unfiltered vinegars like Bragg’s apple cider vinegar intentionally leave it in.

The Orleans method (slow process)

The Orleans method, also called the slow process or surface method, is the oldest documented technique for vinegar production. It originated in the French city of Orleans, which was the center of European vinegar trade for centuries.

The Orleans method produces the highest quality vinegar because the slow, cool fermentation preserves volatile aromatic compounds that faster methods drive off. Traditional balsamic vinegar of Modena and many premium wine vinegars still use variations of this approach. The downside is time. Commercial producers cannot afford to wait months for each batch.

Industrial methods

Modern vinegar production uses two faster alternatives to the Orleans method. Both increase the rate of oxygen transfer to the bacteria, dramatically shortening production time.

Generator (trickling) method The alcoholic liquid is trickled over a tall column packed with wood shavings, charcoal, or ceramic pieces. Acetobacter colonize the packing material. As the liquid drips down, it contacts a continuous updraft of air. A single pass takes hours, and full conversion takes 1-3 weeks. This method produces decent quality vinegar and was the industry standard before submerged fermentation.
Submerged fermentation The liquid is held in a large tank, and fine bubbles of air are pumped directly through it using a system called a Frings acetator (named after the German company that developed it). The constant oxygen supply lets the bacteria work at maximum speed. Full conversion takes 24-48 hours. Nearly all commodity vinegar (white distilled, most store-brand cider vinegar) is produced this way.

Speed comes at a cost. Fast fermentation generates heat and drives off delicate aromatic compounds. This is why a slowly made wine vinegar smells and tastes more complex than an industrial one made from the same wine. Temperature control during submerged fermentation helps, but the flavor difference remains noticeable.

Types of vinegar

Every type of vinegar starts from a different sugar or alcohol source. The base liquid determines the final flavor profile.

Apple cider vinegar Made from fermented apple juice (hard cider). Fruity, mildly tart, and amber-colored. The most popular vinegar for home production.
Wine vinegar Made from red or white wine. Red wine vinegar is bold and tangy. White wine vinegar is lighter and more delicate. Quality tracks closely with the quality of the starting wine.
Balsamic vinegar Traditional balsamic (Aceto Balsamico Tradizionale) is made from cooked grape must and aged in a series of progressively smaller wooden barrels for 12-25 years. Mass-market balsamic is wine vinegar with added grape must and caramel, aged briefly or not at all.
Malt vinegar Made from ale (unhopped beer) brewed from malted barley. Brown, malty, and mildly sweet. The classic companion to fish and chips in the UK.
Rice vinegar Made from fermented rice wine. Mild, slightly sweet, and less acidic than Western vinegars (typically 4-4.5% acidity). A staple in East Asian cooking.
White distilled vinegar Made from diluted distilled alcohol (usually from corn). Neutral in flavor with sharp acidity. Used for cleaning, pickling, and any application where a neutral acid is needed.

Making apple cider vinegar at home

Apple cider vinegar is the best starting project for home vinegar making. You can begin from fresh apple juice, store-bought cider, or even apple scraps. Here is the full process starting from juice.

    Get your apple juice or cider Use fresh-pressed, unpasteurized apple cider if possible. Pasteurized juice works but needs added yeast. Avoid juice with preservatives like potassium sorbate, which inhibit fermentation. You need about 1 liter to start.

    Ferment to hard cider (stage one) If using unpasteurized cider, simply leave it loosely covered at room temperature for 1-2 weeks. Wild yeast on the fruit will ferment the sugars into alcohol. Alternative: starting from apple scraps Fill a wide-mouth jar about three-quarters full with apple peels and cores. Add 1 tablespoon of sugar per cup of water and pour the sweetened water over the scraps until they are submerged. Cover with cloth and stir daily for 1-2 weeks until it smells alcoholic. Strain out the solids, add a splash of raw vinegar, and continue with steps 4-6 above.

Making wine vinegar

Wine vinegar is even simpler than ACV because you skip the first fermentation entirely. The wine already contains alcohol.

    Choose your wine Any drinkable red or white wine works. Avoid wines with high sulfite levels, as sulfites inhibit Acetobacter. Leftover wine is perfect. The better the wine, the better the vinegar.

    Combine wine and starter Pour the wine into a wide-mouth jar or crock. Add 1/4 to 1/2 cup of raw, unfiltered vinegar (any type) per bottle of wine. If you have a vinegar mother from a previous batch, add that too.

If you want to keep a continuous supply, use the solera method: draw off vinegar from the bottom when you need it and top up with fresh wine. The established mother and bacteria colony will convert new additions faster than the original batch.

Testing pH and acidity

Acidity and pH are related but not the same thing. pH measures hydrogen ion concentration on a logarithmic scale. Acidity (often called titratable acidity) measures the total amount of acid present. For vinegar, the acidity percentage is the number that matters most.

pH strips or meter Quick and inexpensive. A pH below 3.5 confirms your vinegar is acidic enough for general use. However, pH alone does not tell you the acidity percentage.
Acid titration kit Uses a measured amount of sodium hydroxide solution to neutralize a vinegar sample. The amount of base needed tells you the exact acidity percentage. Winemaking supply stores sell these kits for about $10-15.
Taste test Not precise, but practical. Finished vinegar should taste sharply sour with no residual alcohol warmth. If it still tastes boozy, give it more time.
