Vinegar is one of the oldest fermented products in the world, and its production is surprisingly simple. Every vinegar, from balsamic to plain white distilled, follows the same basic biology: yeast turns sugar into alcohol, then bacteria turn that alcohol into acetic acid. The difference between a mass-produced gallon jug and an aged artisan bottle comes down to method, ingredients, and time. This guide covers the science, the production methods, and a complete walkthrough for making your own vinegar at home.
The two-stage process
Vinegar production requires two separate fermentations, each driven by a different microorganism.
The chemical equation for the second stage is simple: ethanol + oxygen becomes acetic acid + water. In practice, roughly half the alcohol (by weight) converts to acetic acid. A wine at 10% ABV produces vinegar at roughly 5% acidity.
You can skip stage one by starting with a pre-made alcoholic liquid like wine, hard cider, or beer. Most home vinegar makers take this shortcut because it saves time and produces more consistent results.

Acetobacter and the mother of vinegar
Acetobacter is a genus of acetic acid bacteria found naturally on fruit skins, in unpasteurized alcoholic beverages, and in the air around fermenting liquids. These bacteria are obligate aerobes, meaning they need oxygen to survive and work.
The mother is harmless and edible, though not particularly pleasant to eat. Commercial vinegar is usually filtered and pasteurized to remove the mother for aesthetic reasons. Raw, unfiltered vinegars like Bragg’s apple cider vinegar intentionally leave it in.
The Orleans method (slow process)
The Orleans method, also called the slow process or surface method, is the oldest documented technique for vinegar production. It originated in the French city of Orleans, which was the center of European vinegar trade for centuries.
- 1Fill a barrel or crock partway The vessel is filled to about two-thirds capacity with wine (or another alcoholic liquid). The remaining headspace provides the air contact Acetobacter needs.
- 2Add a starter A portion of raw vinegar or a piece of mother is added to inoculate the liquid with Acetobacter. Small holes or vents near the top of the barrel allow air circulation.
- 3Wait The bacteria form a mother on the surface and slowly convert alcohol to acetic acid. This takes 3-6 months at cellar temperatures.
- 4Draw off and replenish Finished vinegar is drawn from a spigot near the bottom. Fresh wine is added gently (without disturbing the mother) to keep the process going continuously.
The Orleans method produces the highest quality vinegar because the slow, cool fermentation preserves volatile aromatic compounds that faster methods drive off. Traditional balsamic vinegar of Modena and many premium wine vinegars still use variations of this approach. The downside is time. Commercial producers cannot afford to wait months for each batch.
Industrial methods
Modern vinegar production uses two faster alternatives to the Orleans method. Both increase the rate of oxygen transfer to the bacteria, dramatically shortening production time.
Speed comes at a cost. Fast fermentation generates heat and drives off delicate aromatic compounds. This is why a slowly made wine vinegar smells and tastes more complex than an industrial one made from the same wine. Temperature control during submerged fermentation helps, but the flavor difference remains noticeable.
Types of vinegar
Every type of vinegar starts from a different sugar or alcohol source. The base liquid determines the final flavor profile.
Making apple cider vinegar at home
Apple cider vinegar is the best starting project for home vinegar making. You can begin from fresh apple juice, store-bought cider, or even apple scraps. Here is the full process starting from juice.
- 1Get your apple juice or cider Use fresh-pressed, unpasteurized apple cider if possible. Pasteurized juice works but needs added yeast. Avoid juice with preservatives like potassium sorbate, which inhibit fermentation. You need about 1 liter to start.
- 2Ferment to hard cider (stage one) If using unpasteurized cider, simply leave it loosely covered at room temperature for 1-2 weeks. Wild yeast on the fruit will ferment the sugars into alcohol. If using pasteurized juice, add a pinch of wine or cider yeast. The cider is ready when it stops bubbling and tastes dry (no residual sweetness).
- 3Add a vinegar starter Pour the hard cider into a wide-mouth glass jar (a mason jar works well). Add about 1/4 cup of raw, unfiltered apple cider vinegar (such as Bragg) as a starter. This introduces active Acetobacter bacteria.
- 4Cover with cloth and wait Cover the jar with cheesecloth or a coffee filter secured with a rubber band. This allows air in while keeping insects and dust out. Place the jar in a warm, dark spot at 20-30°C (68-86°F).
- 5Monitor for 3-6 weeks A mother will form on the surface within 1-2 weeks. Do not disturb it. Taste the vinegar weekly by dipping a straw below the mother. It is ready when it tastes distinctly sour and the alcohol flavor is gone.
- 6Bottle and store When the vinegar reaches your desired acidity, strain it through a fine-mesh sieve or cheesecloth into clean bottles. Cap tightly to stop further fermentation. The mother can be used to start your next batch.
Making wine vinegar
Wine vinegar is even simpler than ACV because you skip the first fermentation entirely. The wine already contains alcohol.
- 1Choose your wine Any drinkable red or white wine works. Avoid wines with high sulfite levels, as sulfites inhibit Acetobacter. Leftover wine is perfect. The better the wine, the better the vinegar.
- 2Combine wine and starter Pour the wine into a wide-mouth jar or crock. Add 1/4 to 1/2 cup of raw, unfiltered vinegar (any type) per bottle of wine. If you have a vinegar mother from a previous batch, add that too.
- 3Cover and ferment Cover with cloth and place in a warm spot at 20-27°C (68-80°F). A mother will form on the surface within 1-2 weeks.
- 4Taste and bottle Check the vinegar after 3-4 weeks. Good wine vinegar develops in 4-8 weeks. When the alcohol flavor is gone and the acidity is sharp, strain and bottle it.
If you want to keep a continuous supply, use the solera method: draw off vinegar from the bottom when you need it and top up with fresh wine. The established mother and bacteria colony will convert new additions faster than the original batch.
Testing pH and acidity
Acidity and pH are related but not the same thing. pH measures hydrogen ion concentration on a logarithmic scale. Acidity (often called titratable acidity) measures the total amount of acid present. For vinegar, the acidity percentage is the number that matters most.
- Do not use homemade vinegar for canning unless you have verified the acidity is at least 5% using a titration kit
- A vinegar that smells like nail polish remover (ethyl acetate) needs more time to mature. The smell usually fades.
- If your vinegar develops a foul, rotten smell rather than a sharp, clean sourness, discard it and start over with fresh ingredients
- Always store finished vinegar in glass bottles with tight caps. Leaving it uncapped allows further evaporation and concentration.
