Understanding Cabernet grapes

Cabernet Sauvignon and Cabernet Franc are related varieties with overlapping but distinct profiles. Cabernet Sauvignon is a natural cross of Cabernet Franc and Sauvignon Blanc, first identified in the Bordeaux region of France. Understanding their differences helps you make better decisions during fermentation and aging.

Cabernet Sauvignon Small, thick-skinned berries with a high skin-to-juice ratio. Crush, destem, and cold soak

The first hands-on stage is crushing and destemming the grapes. You want to break the skins open to release juice, but you do not want to shred them or pulverize the seeds. Excessive mechanical damage extracts harsh, bitter tannins from the seeds early in the process.

Punch-downs (pigeage) Use a punch-down tool (a flat disk on a handle) to push the cap back into the juice 2-3 times per day. This is the gentler method and is preferred for home winemaking. Pump-overs (remontage) Drain juice from the bottom of the fermenter and pump it over the top of the cap. You can always add more, but you cannot take it out.

Malolactic fermentation

Malolactic fermentation (MLF) is not technically a fermentation. It is a bacterial conversion where Oenococcus oeni (or related bacteria) converts sharp malic acid into softer lactic acid and CO2. For Cabernet wines, MLF is a standard and expected part of the process. Skipping it produces a wine that tastes tart and unfinished.
