Cabernet is the backbone of red winemaking worldwide. Whether you are working with Cabernet Sauvignon or its parent grape Cabernet Franc, the fermentation process follows the same arc: crush, cold soak, ferment on skins, press, complete malolactic conversion, and age. Each step has a direct impact on the tannin structure, color depth, and flavor complexity of the finished wine. This guide walks through the full process with timing, temperatures, and practical techniques for each stage.
Understanding Cabernet grapes
Cabernet Sauvignon and Cabernet Franc are related varieties with overlapping but distinct profiles. Cabernet Sauvignon is a natural cross of Cabernet Franc and Sauvignon Blanc, first identified in the Bordeaux region of France. Understanding their differences helps you make better decisions during fermentation and aging.
Crush, destem, and cold soak
The first hands-on stage is crushing and destemming the grapes. You want to break the skins open to release juice, but you do not want to shred them or pulverize the seeds. Excessive mechanical damage extracts harsh, bitter tannins from the seeds early in the process.
- 1Sort and destem the grapes Remove leaves, raisined berries, and any material other than grapes (MOG). Destem either by hand or with a mechanical destemmer-crusher. Some winemakers leave a small percentage of whole clusters (10-20%) to add structure and spice, but this technique works best with fully ripe stems that have lignified (turned brown and woody).
- 2Crush the berries Break the skins open to release juice. A hand-cranked or motorized crusher works well. Avoid over-processing. You want cracked berries, not grape smoothie. The juice, skins, seeds, and pulp together form the "must."
- 3Add sulfite Add potassium metabisulfite at a rate of 50 ppm (approximately 1/4 teaspoon per 5 gallons of must). This suppresses wild yeast and bacteria, giving you time to cold soak before inoculating with your chosen yeast strain.
- 4Cold soak for 2-5 days Chill the must to 50-60°F (10-15°C) and hold it there for 2-5 days. Cold soaking extracts water-soluble anthocyanins (color pigments) without pulling harsh tannins from seeds and skins. The result is a deeper-colored wine with softer tannin structure. Punch down the cap once or twice daily during the soak.
- Do not skip the sulfite addition before cold soaking. Without it, wild yeast and bacteria will begin fermenting in the cold must, producing off-flavors and volatile acidity.
- If you cannot control must temperature for a cold soak, skip this step and inoculate immediately. An uncontrolled warm soak is worse than no soak at all.
- Avoid including green, unripe stems. They contribute vegetal, bitter tannins that no amount of aging will soften.
Primary fermentation on skins
Primary fermentation is where grape juice becomes wine. For Cabernet, this happens with the juice in full contact with the skins and seeds. The skins provide color, tannin, and flavor. Managing the duration and temperature of this contact determines the wine’s body, structure, and aging potential.
Managing the cap during fermentation
During fermentation, CO2 pushes grape skins, seeds, and pulp to the surface, forming a dense mass called the “cap.” Left alone, the cap dries out and becomes a breeding ground for spoilage bacteria, particularly acetobacter (which produces vinegar). Regular cap management keeps the skins submerged in juice for consistent extraction and prevents spoilage.
- Never let the cap sit undisturbed for more than 12 hours during active fermentation. A dry cap is a spoilage risk.
- Reduce cap management frequency once fermentation slows (after day 5-7). Over-extraction at this stage pulls harsh, seed-derived tannins.
- If the must smells like rotten eggs (hydrogen sulfide) during punch-downs, the yeast is stressed. Add nutrients and aerate the must with a vigorous pump-over.
Pressing and finishing primary
Pressing separates the new wine from the grape solids. The timing and pressure of your press directly affect the wine’s tannin profile and texture. Press too early and you miss out on extraction. Press too late or too hard and you extract harsh, bitter compounds that no amount of aging will fix.
- 1Decide when to press Most winemakers press when the wine reaches dryness (0-2°Brix on a refractometer, or below 0.998 specific gravity). Taste the wine daily starting around day 5. When tannins feel firm but not bitter and color is deep, it is time to press. For a lighter style, press slightly before dryness (around 2-3°Brix remaining).
- 2Drain the free-run wine Open the valve at the bottom of the fermenter and collect the juice that flows out under gravity alone. This free-run wine is the highest quality fraction, with the smoothest tannins and best balance.
- 3Press the remaining must Transfer the skins and remaining juice to a basket press or bladder press. Apply gentle, gradual pressure. The first pressings are close to free-run quality. As pressure increases, the juice becomes darker, more tannic, and more bitter. Many winemakers keep the first pressing and free-run together, and set aside the hard pressings separately.
- 4Settle and rack Let the pressed wine settle in a carboy or tank for 24-48 hours. Rack (siphon) the clear wine off the heavy sediment (gross lees) into a clean vessel. This removes grape solids, dead yeast, and other debris that can produce off-flavors if left in contact for too long.
Malolactic fermentation
Malolactic fermentation (MLF) is not technically a fermentation. It is a bacterial conversion where Oenococcus oeni (or related bacteria) converts sharp malic acid into softer lactic acid and CO2. For Cabernet wines, MLF is a standard and expected part of the process. Skipping it produces a wine that tastes tart and unfinished.

Oak aging and alternatives
Oak aging transforms young Cabernet wine. Raw, tannic wine slowly integrates and softens as oxygen permeates through the barrel staves. The oak itself contributes flavors of vanilla, toast, spice, and coconut depending on the oak origin and toast level. This stage separates a drinkable table wine from one with real complexity and depth.
- Do not age wine in a partially filled container. The headspace allows oxidation, which produces flat, brown, sherry-like characteristics.
- Taste the wine monthly during oak aging. Oak extraction varies with temperature and toast level. Over-oaked wine tastes like lumber, and there is no fix for it.
- Maintain SO2 levels throughout aging. Test free SO2 every 6-8 weeks with an aeration-oxidation kit or a commercial testing service. Low SO2 leaves the wine vulnerable to spoilage bacteria and oxidation.
Cabernet wines reward patience at every stage. A well-made Cabernet Sauvignon can continue improving in the bottle for 5-15 years after release. For home winemakers, even 6-12 months of oak aging and a few months of bottle rest before opening produces a wine with noticeably more depth, smoother tannins, and better integration than one rushed to the glass.
