Lacto-fermentation is the simplest way to preserve vegetables: submerge them in a 2–3% salt brine, keep them under the liquid and away from air, and let the Lactobacillus bacteria already living on the produce turn its sugars into lactic acid. That acid sours the vegetables, protects them from spoilage organisms, and gives you crunchy, tangy, probiotic-rich ferments — with nothing but salt, water, and time.
What is lacto-fermentation?
Lacto-fermentation has nothing to do with dairy — the “lacto” refers to lactic acid, and to the family of Lactobacillus bacteria that produce it. These bacteria live naturally on the surface of fresh vegetables. When you seal the veg in a salty, oxygen-free environment, the salt suppresses spoilage microbes while the salt-tolerant lactic acid bacteria thrive, feeding on the vegetables’ natural sugars and excreting lactic acid.
Two things make this safe and reliable. Salt gives the Lactobacillus a head start over molds and rot-causing bacteria. Anaerobic (airless) conditions — created by keeping everything under the brine — favour the fermenting bacteria and shut out the yeasts and molds that need oxygen. As acid builds, the pH drops below 4.6, and the environment becomes hostile to anything that could make you ill. The result preserves for months and only gets more complex with age.
How much salt: brine vs dry-salting
Salt is the one measurement worth getting right. For lacto-fermented vegetables, aim for 2–3% salt by weight of everything in the jar — vegetables plus water combined. Weigh, don’t eyeball it: a level teaspoon of one salt weighs very differently from another.
There are two ways to get salt into the jar. Brining — dissolving salt in water and pouring it over the vegetables — is best for chunky or whole veg like carrots, beans, cauliflower, and garlic, where the pieces don’t release much of their own liquid. Dry-salting — massaging or tossing salt directly into shredded veg — is best for high-moisture, finely cut vegetables like cabbage (sauerkraut) or grated carrot, which sweat out enough of their own juice to form the brine. Both target the same 2–3%; they just differ in where the water comes from.
Use pure salt with no additives — fine sea salt, pickling salt, or kosher salt. Avoid table salt with anti-caking agents or added iodine, which can cloud the brine or inhibit the culture.

Which vegetables work best
Firm, relatively low-sugar vegetables give the most dependable, crunchy results. Reach for these first:
You can also combine vegetables in one jar — carrots with garlic and dill, cauliflower with turmeric and chilli, mixed “giardiniera” style. The master method, step by step
This protocol works for any firm vegetable. Scale it up or down to your jar.
- 1Prep and pack the veg Wash the vegetables and cut them into even spears, coins, or florets. Pack them firmly into a clean jar, leaving about 3–4 cm of headspace at the top. Tuck in any spices, garlic, or a tannin leaf as you go.
- 2Make the brine Dissolve salt in filtered or dechlorinated water at 2–3% by weight (roughly 20–30 g salt per litre of water). Use the brine calculator for exact amounts based on your jar size and veg weight.
- 3Cover completely Pour the brine over the vegetables until they are fully submerged. Every piece must sit below the liquid line — exposed veg is where spoilage starts.
- 4Weigh it down Set a fermentation weight, a small water-filled bag, or a clean cabbage-leaf cap on top to hold the vegetables under the brine. Wipe any stray bits from the jar rim.
- 5Seal and set aside Fit an airlock lid, or close a normal lid loosely. Keep the jar out of direct sunlight at cool room temperature. Place it on a plate or tray to catch any overflow.
- 6Burp, watch, and taste For the first week, loosen the lid daily to release CO₂ if you are not using an airlock. From day 5 or so, taste every few days. When the flavour is pleasantly sour, move the jar to the fridge to slow fermentation to a crawl.
Keeping vegetables submerged
If you remember one rule beyond salt, make it this: submerged veg is safe veg. The airless space under the brine is where lactic acid bacteria dominate. Anything poking above the surface is exposed to oxygen, where kahm yeast and mold take hold.
Hold produce down with a purpose-made glass or ceramic fermentation weight, a small zip bag filled with brine (so a leak won’t dilute your ferment), or a folded outer cabbage leaf packed under the shoulder of the jar. Leave enough headspace that rising brine and foam don’t force liquid out — jars can bubble over vigorously in the first few active days. If the brine level ever drops and exposes the veg, top it up with fresh brine mixed at the same percentage.
Temperature and time
Temperature is the throttle for fermentation speed and flavour. The sweet spot for vegetables is cool room temperature, around 18–22°C (64–72°F). Warmer is faster but rougher and more spoilage-prone; cooler is slower but produces cleaner, more complex flavour and firmer texture.
There is no fixed finish line — “done” is when it tastes right to you. Start tasting from the second week. Early on it will be salty and lightly tart; over time it grows sourer and rounder. Once you love it, refrigerate. Cold storage doesn’t stop fermentation entirely but slows it so much that the flavour holds for months.
Burping and airlocks
Fermentation produces carbon dioxide, and that gas has to go somewhere. If it can’t escape, pressure builds and jars can overflow or, rarely, crack. You have two good options.
An airlock lid — a water-filled or silicone one-way valve — lets CO₂ bubble out while blocking air from getting in. It’s the most hands-off approach and keeps oxygen (and kahm yeast) at bay. Alternatively, burp a standard jar: once a day for the first active week, briefly loosen the lid until you hear the hiss of escaping gas, then reseal. Either method works; the goal is the same — let gas out without letting air in. Never fully airtight-seal a jar and forget it during the vigorous first week.

A healthy ferment announces itself within a day or two. Look and smell for these:
Spoilage: what to watch for
Real spoilage is uncommon when salt and submersion are right, but know the warning signs. The most frequent visitor is kahm yeast — a thin, flat, white, sometimes wrinkly film on the surface. It’s harmless, just off-flavoured: skim it off, re-submerge everything, and carry on. Mold is different — it’s fuzzy and raised, in blue, green, black, grey, or pink. That’s a discard signal.

- A slimy, ropey, or thick stringy brine texture
- A rotten, putrid, or foul smell rather than a clean sour one
- Mushy, disintegrating vegetables with an unpleasant odour
- Any pink discolouration through the vegetables (not from beets or radish)
Trust your nose above all — lacto-ferments smell sharp and sour but appetising. If a surface mold appears but the vegetables stayed submerged and smell fine, many fermenters remove the top layer and salvage the batch; when in doubt, or if mold is widespread or the smell is rotten, throw it out. Reassuringly, no case of foodborne botulism has ever been traced to fermented vegetables — the acidic, salty, anaerobic environment is genuinely protective.
Storage and quick fixes
Once your ferment tastes right, cap it with a normal lid and refrigerate. It keeps for many months, staying submerged in its own brine, slowly deepening in flavour. Always use a clean utensil to fish pieces out, and press the remaining veg back under the liquid.
A few common issues and their fixes: soft or mushy veg usually means the salt was too low, the room too warm, or no tannin source — go firmer on salt, cooler on temperature, and add a grape or tea leaf next time. Too salty means you can shorten the ferment or dilute slightly with the next brine top-up. Not sour enough means it needs more time at room temperature before you chill it. Brine level dropping just needs a fresh 2–3% top-up to keep everything covered.
