Common fermented sodas questions
What is a fermented soda?
A soft drink carbonated by fermentation instead of CO₂ tanks. A starter such as a ginger bug, or the wild yeast on fruit, eats some of the sugar and produces bubbles. Most are very low in alcohol when bottled and chilled promptly.
Do fermented sodas contain alcohol?
A little. Short ferments that are refrigerated as soon as they are fizzy usually stay well under 1% ABV, but longer or warmer ferments can climb higher. Do not leave sealed bottles fermenting for days at room temperature.
How do I stop bottles exploding?
Use pressure-rated swing-top or plastic soda bottles, leave headspace, check the pressure daily by squeezing a plastic bottle or carefully opening one, and refrigerate as soon as they are fizzy. Cold stops the yeast.
