Method 1: Hot mashing

Method 2: Cold mashing

Arrested fermentation starts like a normal brew day but cuts fermentation short before the yeast produces significant alcohol. You brew a standard wort, pitch yeast at a cold temperature, and crash the fermenter to near-freezing after a set period.

Hopping strategies for NA beer

Hops carry a lot of weight in non-alcoholic beer because the malt backbone is thinner. A well-hopped NA beer can taste surprisingly full and complex, while a poorly hopped one tastes like sweet water.

Keep bittering moderate The thinner body of NA beer amplifies perceived bitterness. Target 15-25 IBU rather than the 40-70 you might use in a regular IPA. A small bittering charge at 60 minutes is enough.
