Burping a jar just means briefly releasing the gas that builds up inside a sealed fermentation vessel. It’s a small habit, but skipping it is one of the most common beginner mistakes across sauerkraut, kimchi, and pickle ferments. Here’s exactly when to do it and how to tell if you’ve waited too long.

Why CO2 builds up

Bacteria produce gas Lactic acid bacteria, starting with Leuconostoc mesenteroides in sauerkraut, produce CO2 as they ferment.
The gas pushes out oxygen this is actually helpful early on — it helps create the low-oxygen environment fermentation needs.
A sealed jar traps it in a fully closed vessel, that gas has nowhere to go, so pressure builds until it's released.

How often to burp, by day

  1. 1
Days 1–4: twice a day Gas production is highest early on. Burp roughly twice daily, morning and evening.
  2. 2
Days 5 onward: once a day As bacterial activity slows, tapering to once daily is usually enough.
  3. 3
Cold room: every couple of days Lower temperatures slow gas production, so you can stretch the interval out.
  4. 4
The lid test If the lid gives slightly when pressed, it doesn't need burping yet. If it's rigid, it's time.

Temperature changes the schedule

Warm room (70–75°F) Sauerkraut ferments in 3–4 weeks at this range. Faster fermentation means more frequent burping is needed.
Cooler room (60–65°F) Sauerkraut takes 5–6 weeks here. Slower gas production means less frequent burping.
Below 60°F Fermentation may barely happen at all, and burping needs drop off accordingly.

Headspace to leave

1–2 in common recommendation from NCHFP and extension guides
2 in (5cm) the most common default to use
3–4 in recommended for small-batch sauerkraut by some extensions

As a rule of thumb, never fill a fermenting vessel more than about 80% full — the extra room gives gas somewhere to go before it pushes against the lid.

Signs of over-pressure

Watch for

  • A bulging or domed lid
  • A hissing sound when you loosen the lid
  • Brine pushed out around the seal
  • In rare cases, a cracked jar

Open crocks and loosely covered jars carry essentially no risk of this — gas escapes continuously, so there’s nothing to build up.

Airlocks vs. weights vs. manual burping

Airlocks Vent gas passively and block incoming air, removing the need for daily burping. They don't guarantee submersion on their own.
Weights Solve submersion, the main defense against mold, but don't vent gas — a jar with only a weight and a sealed lid still needs burping.
Best practice Experienced fermenters often use a weight and an airlock together, getting both submersion and hands-off gas release.

Kombucha second ferment is different

Sealed kombucha bottles in second fermentation are meant to build pressure on purpose, so a forgotten bottle is higher stakes. “Booch bombs” are a known hazard from bottles left too long or too warm, and burping daily for the first few days is the standard safety habit there — not just an optional gas release like it is for vegetable ferments. Our second fermentation calculator helps dial in sugar amounts so you get reliable carbonation without over-pressurizing bottles.

For sauerkraut, kimchi, and pickles, fizziness is a harmless side effect, not something worth protecting — burp freely with no real downside.

FAQ

Frequently asked questions

How often should I burp a fermentation jar?
A common pattern is once or twice a day during the first few days, when gas production is highest, tapering off as activity slows. If the room is cold, every couple of days can be enough. A simple test: if the lid gives slightly when pressed, it doesn't need burping yet; if it's rigid, it's time.
Do I need to burp if I have an airlock?
No. Airlocks vent gas passively and block incoming air, which removes the need for daily burping entirely. The same goes for jars with a loose-fitting cover instead of a fully sealed lid — they self-vent on their own.
How much headspace should I leave in a fermentation jar?
Recommendations vary a bit by source, from 1–2 inches up to 3–4 inches for small-batch sauerkraut. A good working range is roughly 1–4 inches (2.5–10cm), with 2 inches (5cm) as the most common default. Never fill a fermenting vessel more than about 80% full.
What happens if I forget to burp a jar?
Pressure builds up and shows itself as a bulging or domed lid, a hissing sound when you finally open it, or brine pushed out around the seal. In rare cases a fully sealed jar can crack. Open crocks or loosely covered jars carry essentially no risk since gas escapes continuously on its own.
Should I burp kombucha during second fermentation?
Yes, and it matters more there than with vegetable ferments. Kombucha's second fermentation is meant to build pressure for carbonation, so a forgotten bottle is higher stakes — "booch bombs" are a known hazard from bottles left too long or too warm. Burping daily for the first few days is the standard safety habit.
Does burping lose carbonation in kombucha?
For kombucha, yes — burping too often can reduce the fizz you're trying to build, so it's a real trade-off there. For sauerkraut, kimchi, and pickles, fizziness is just a harmless side effect of fermentation, not something you're trying to preserve, so burping freely has no downside.
