Sour dill pickles are cucumbers fermented in a plain salt brine — no vinegar anywhere. Wild lactic acid bacteria living on the cucumbers convert their natural sugars into lactic acid, which is what makes a real deli pickle sour, tangy, and complex in a way a vinegar pickle never is. Get the brine right, keep the cukes submerged, and time is the only other ingredient you need.
Sour pickles are fermented, not vinegar-pickled
The word “pickle” covers two completely different things. A quick or canned pickle is a cucumber soaked in hot vinegar, sugar, and salt — sharp, uniform, and shelf-stable, but never alive. A sour dill pickle is fermented: submerged in salt brine at room temperature so wild bacteria can do the souring themselves.
That distinction matters for flavour and for method. Fermented sours taste rounder and more savoury, they’re naturally probiotic, and they get their tang from lactic acid rather than acetic acid. The brine: 3.5–5% salt by weight
Everything hinges on salt concentration. Too little and you invite soft, spoiled pickles; too much and the ferment stalls. The reliable window for sour dills is 3.5% to 5% salt by weight — that’s roughly 3 to 4 tablespoons of fine sea salt per quart (about 1 litre) of water.
Use non-iodised salt — fine sea salt, pickling salt, or kosher salt. Iodine and the anti-caking agents in table salt can cloud the brine, darken pickles, and inhibit the bacteria. Weigh your water and salt rather than guessing by volume, since salt crystals vary wildly in density.
Cucumbers, dill, garlic and spice
Start with small, firm pickling cucumbers — Kirby, National Pickling, or similar — 4 to 6 inches long, with bumpy skins and no wax. Wax coatings (common on grocery slicing cucumbers) block the brine and stop fermentation. Freshness is non-negotiable: pickle within a day of harvest for the crunchiest results.

Step-by-step sour dill protocol

- 1Prep the cucumbers Scrub gently, then soak in ice water for 2–4 hours to firm them. Trim about 1.5mm off each blossom end.
- 2Mix the brine Dissolve 3–4 Tbsp (about 35–45g) non-iodised salt into 1 quart (about 950ml) of unchlorinated water for a ~4% brine. Warm water helps it dissolve; cool it before use.
- 3Pack the jar Layer dill, smashed garlic, spices, and your tannin leaf with the cucumbers. Pack tightly and upright so they hold each other down below the brine line.
- 4Cover and weight Pour brine over everything, leaving about an inch of headspace. Use a fermentation weight or a small brine-filled bag to keep every cucumber fully submerged. Exposed cucumber is where mould starts.
- 5Ferment at room temperature Loosely cap or use an airlid and set out of direct sun at 18–22°C. Expect cloudiness and bubbling within 1–3 days — that is fermentation working. Burp tightly-sealed jars daily.
- 6Taste and decide Start tasting at day 3. Pull for half-sour when bright and lightly tangy, or keep going for full-sour. Skim any white film as it appears.
- 7Refrigerate to stop When the pickles taste right, cap them and move to the fridge. Cold slows fermentation to a near-halt so they hold at your preferred sourness.

Half-sour vs full-sour: timing
Half-sour and full-sour aren’t different recipes — they’re the same jar caught at two moments. Half-sours are pulled early, while the cucumber still has a raw, crunchy heart and only a light tang. Full-sours go the distance until they’re soured and translucent right through to the centre.
Warmer rooms ferment faster and softer; cooler rooms take longer but stay crisper. The visual cue for a full-sour is colour: a finished sour pickle turns from bright green to a uniform olive-drab and looks translucent when sliced, with no pale raw core remaining.
When to move them to the fridge
There’s no single “done” — done is whenever the sourness matches your taste. The fridge is your off switch. Cold doesn’t stop fermentation entirely, but it slows it so dramatically that a jar will hold roughly where it is for months.
Move them over once the flavour is right and, importantly, before the pickles go soft. If you like a deep full-sour but want crunch, you’re balancing two clocks: sourness climbs while firmness falls. Refrigerated in their brine, sealed and submerged, fermented dills keep 6–12 months, growing gradually more sour and soft over time — so eat the crispest ones first.
Troubleshooting: soft, hollow, scum
Most sour-pickle problems trace back to salt level, temperature, submersion, or the cucumbers themselves. Here’s how to read the warning signs:
Watch for
- Soft or mushy pickles — usually low salt, too-warm ferment, or untrimmed blossom ends. Fix the brine to 3.5–5%, ferment cooler, and add tannins.
- Hollow centres — a cucumber problem, not a brine one Over-mature or slow-grown cukes. Use small, very fresh pickling cucumbers and skip any that float.
- White film on the surface — kahm yeast, harmless. Skim it, keep everything submerged, and carry on.
- Fuzzy blue, green, black, or pink growth — that is mould. Discard the batch; do not try to salvage it.
- Slimy, ropey brine or a rotten smell — spoilage from too little salt or warmth. Throw it out and restart with a stronger, cooler brine.
- Cucumbers floating above the brine — they will mould. Always weight them fully under the liquid.
A cloudy brine and a sour, briny smell are both completely normal — that’s a healthy ferment, not a fault. Trust your nose: a good ferment smells pleasantly sour and garlicky, never putrid.
