Indian lime pickle — nimbu ka achar — is a salt-cured preserve, not a vinegar pickle. Whole limes are quartered, packed with a heavy dose of salt, and left in the sun for weeks until the skins soften to a translucent amber and the raw bitterness gives way to a deep, tangy, savory intensity. The salt and the sun are the whole recipe; spices come later.
How salt-curing limes works
Unlike quick pickles that rely on vinegar, traditional lime pickle preserves through salt alone. A heavy salt dose — around 15–20% of the fruit’s weight — draws moisture out of the rind and pulp by osmosis, creating a thick, intensely salty juice that the limes then sit in. That combination of high salt and low free water makes it nearly impossible for spoilage microbes to survive.
At the same time, salt and warmth slowly transform the fruit. The firm green skin turns soft and pliable, the flesh breaks down, and the bitter compounds in the rind and pith mellow into savory complexity. This is why a fresh, sharp, bitter jar becomes rounded and delicious after a few weeks — the cure is doing chemistry, not just seasoning.
Choosing and prepping your limes
The best pickle starts with the right fruit. Look for thin-skinned, fully ripe limes that feel heavy for their size — they hold more juice and have less bitter pith. Small Indian or key limes are traditional, but common Persian limes work well too.
Trim off the stem-end nub and any attached pith. Then quarter each lime lengthwise but stop short of cutting all the way through, so the four segments stay joined at the base — this holds the fruit together and makes it easy to stuff with salt.
The salt-curing protocol
This is the core of the recipe. Everything after is seasoning. Sterilize a glass jar with a tight lid, and work with clean, dry hands and utensils throughout.
- 1Weigh and salt Weigh your limes, then measure 15–20% of that weight in non-iodized salt (150–200g per kilogram of fruit). For example, 1kg of limes needs about 180g of salt.
- 2Stuff and layer Push a spoonful of salt into the cut of each quartered lime, then pack them into the jar. Sprinkle any remaining salt between the layers and over the top.
- 3Add turmeric (optional) Stir in 1–2 teaspoons of turmeric per kilogram now if you want the classic golden color and its mild antimicrobial effect. Chili and other spices come later.
- 4Seal and sun-cure Close the jar and set it in a warm, sunny window or outdoors during the day. Bring it in at night. Shake or invert the jar daily so every lime is bathed in salt and juice.
- 5Wait for the transformation Over 2–4 weeks the skins turn soft, translucent and amber; the juice thickens and the bitterness fades. Ripeness to the core — soft, deep-colored rind — means the cure is done.
Reading the cure: is it ready?
Watch the fruit, not the calendar — sun strength and room temperature change the timing dramatically. These are the signals a cure is complete and ready to season or eat.

Salt-curing is slow and forgiving, but temperature and sunlight set the pace. Use these as rough guides and confirm by feel and color.
For full flavor, let the pickle mature 6–8 weeks total before you dig in — even after the skins soften, another few weeks rounds out the taste. A well-salted jar only improves over its first several months, deepening in color and complexity.

Tempering: turning the cure into achar
Once the limes are soft and cured, you can eat them plain — but tempering (tadka) is what makes the classic Punjabi-style hot pickle. Dry-roast and grind the spices, bloom them in hot oil, and fold everything through the cured limes.
Let the tempered pickle rest another 3–5 days so the spices meld into the fruit before serving.

Storage and safety
A correctly salted lime pickle is one of the most stable preserves you can make — but only if you respect the two things that keep it safe: enough salt, and no exposure to air or moisture.
Watch for
- Never let limes sit above the liquid or oil — exposed fruit molds. Press them down or top up with lime juice or oil.
- Use only clean, bone-dry spoons. A single wet or dirty spoon can introduce mold to the whole jar.
- Under-salting is the main failure mode — if the pickle smells fermented, alcoholic, or slimy, the salt was too low; discard it.
- Use non-iodized salt; iodine darkens the pickle and iodized salts often carry anti-caking agents that cloud the juice.
Stored in a cool, dark cupboard with the fruit submerged, salt-cured lime pickle keeps for a year or more and deepens in flavor the whole time. Refrigeration isn’t required — the salt does the preserving — though an opened, low-oil jar can be chilled for extra peace of mind. A tempered, oil-sealed pickle is the most robust of all: the oil cap locks out the air that mold needs.
