Fermented green tomatoes are one of the oldest vegetable ferments in Eastern European and Southern US kitchens. The process is simple: submerge firm, unripe tomatoes in a salt brine with garlic, dill, and spices, then let lactic acid bacteria do their work over 7–14 days. You get a tangy, crunchy, probiotic-rich side that works on sandwiches, alongside grilled meats, or straight out of the jar.
Why green tomatoes, not red
Green tomatoes ferment better than ripe ones for a few specific reasons. Unripe tomatoes have firmer flesh, higher pectin content, and more natural tannins. All three qualities help the tomatoes hold their shape during a multi-week ferment instead of dissolving into mush.
Ripe red tomatoes are soft by nature. Their cell walls have already broken down during ripening, and the acidity of fermentation accelerates that process further. Within two or three days in a brine, a ripe tomato collapses. A green tomato, by contrast, stays firm and snappy for weeks.
Look for tomatoes that are completely green, with no pink or red blush. Even partially ripe tomatoes soften faster. The best candidates feel rock-solid when you squeeze them.
Choosing and preparing your tomatoes
Any variety of green tomato works, but some hold up better than others. Paste and plum types (Roma, San Marzano) are especially dense and firm. Beefsteak varieties work fine, though their seed cavities are larger and may soften slightly faster. Cherry tomatoes ferment well too, but you need to prick each one so the brine can penetrate the skin.
Wash the tomatoes well but do not scrub them aggressively. The wild lactic acid bacteria living on the skin are the organisms that will drive the ferment. Remove stems and any blemished spots. Cut away the core nub at the top if it is tough or woody.
Making the brine: 3–5% salt
The brine does two things: it creates a salty environment that favors lactic acid bacteria over spoilage organisms, and it keeps the tomatoes submerged so they ferment evenly without air exposure.
To make the brine, dissolve non-iodized salt in water. Use 30–50 grams of salt per litre of water depending on your target percentage. Iodized table salt can inhibit fermentation, so reach for sea salt, pickling salt, or kosher salt instead. Dissolve the salt completely before pouring it over the tomatoes.
A 3.5% brine (35 g per litre) is a solid starting point. It ferments steadily at room temperature and produces a balanced sour flavor within 7–14 days. If your kitchen runs warm, above 24°C (75°F), bump it up to 4–5% to slow things down and reduce the risk of off-flavors.
Flavor additions and tannin for crunch
Green tomatoes carry a clean, tart flavor on their own, but a few additions make the finished ferment much more interesting. The classic combination is garlic, dill, and black peppercorns. From there, you can build in whatever direction suits your kitchen.
The most useful addition is a tannin-rich leaf. Horseradish leaves are the traditional choice. Grape leaves, oak leaves, and cherry leaves all work the same way. The tannins in these leaves inhibit pectinase, the enzyme that softens plant cell walls during fermentation. Add one or two leaves per jar, tucked in on top of or beneath the tomatoes.
If you cannot find any of these leaves, a small piece of horseradish root (peeled, about 2 cm) serves the same purpose and adds a sharp, peppery flavor to the brine.

Packing the jar and keeping tomatoes submerged
How you pack the jar determines whether the ferment stays clean or develops problems. The rule is simple: everything must stay below the brine surface. Any tomato exposed to air invites mold and off-flavors.
- 1Layer the aromatics Place garlic, dill, peppercorns, and your tannin leaf at the bottom of a clean wide-mouth jar. A quart (1-litre) or half-gallon (2-litre) jar works well.
- 2Pack the tomatoes Arrange whole, halved, or sliced tomatoes tightly in the jar. Pack them snugly so they do not float freely, but leave 3–5 cm of headspace at the top.
- 3Pour in the brine Cover the tomatoes completely with your prepared salt brine. The brine should sit at least 2 cm above the top of the tomatoes.
- 4Weight them down Place a fermentation weight, a small plate, or a brine-filled zip-lock bag on top to keep everything submerged. Floating tomatoes are the most common cause of mold.
- 5Cover loosely Use an airlock lid if you have one. Otherwise, cover with a cloth secured by a rubber band, or set a regular lid on top without tightening it. The ferment needs to release CO2.
Check the jar daily for the first few days. Push down any tomatoes that have floated above the brine. Top off with fresh brine (at the same salt percentage) if the level drops below the tomatoes.
Fermentation timeline: 7–14 days
Green tomatoes ferment at a moderate pace compared to cucumbers or cabbage. At room temperature, 18–22°C (64–72°F), most batches hit a pleasant sourness in 7–14 days. The exact timing depends on temperature, tomato size, and brine strength.
You will see bubbles forming within the first two to three days. This is normal and means the lactic acid bacteria are active. The brine may turn slightly cloudy, which is also expected.
Start tasting from day 5. Slice a tomato in half and taste the center, not just the outside. The ferment is ready when the sourness has penetrated all the way through. If the center still tastes raw and grassy, give it more time.
Watch for
- Fuzzy mold on the surface means discard the batch. A thin white film (kahm yeast) is harmless and can be skimmed off.
- Pink, black, or green spots on the tomatoes are signs of spoilage. Do not eat them.
- A strong, unpleasant smell (sulfurous or rotten) means something went wrong. Properly fermenting tomatoes smell sour and briny, not putrid.
- Tomatoes that have turned very soft or slimy have over-fermented or were too ripe at the start.
Storage and shelf life
Once the tomatoes taste the way you want them, transfer the jar to the refrigerator. Cold temperatures slow fermentation to a near stop, preserving the flavor and texture at the point you liked them.
Fermented green tomatoes keep in the fridge for 3–6 months in their brine. They may continue to develop flavor slowly, becoming slightly more sour over weeks, but the change is gradual. Texture holds well for the first two to three months.
Always keep the tomatoes submerged in brine during storage. If the level drops, top it off with a fresh batch at the same salt concentration. Use clean utensils when pulling tomatoes from the jar to avoid introducing contaminants.
Serving ideas
Fermented green tomatoes are more versatile than you might expect. Their sour crunch makes them a natural fit anywhere you would use a dill pickle or pickled vegetable.
The leftover brine is also worth saving. Use it as a starter for your next vegetable ferment (a few tablespoons will inoculate a new batch), as a salad dressing base, or as a tangy addition to Bloody Mary cocktails.
