Open crocks with weights

Handles A 5L crock full of sauerkraut and brine weighs 6 to 7 kg. A 10L crock, over 12 kg. Built-in handles or lug ears make moving a full crock safer and easier. How to use a water-seal crock

If you have never used a water-seal crock before, here is the process from start to finish.

    Clean the crock, weights, and lid Wash everything with hot soapy water and rinse thoroughly. A new crock may have dust or residue from manufacturing and shipping. There is no need to sterilize. Lacto-fermentation relies on salt concentration and an acidic environment to control bacteria, not a sterile vessel.

    Prepare your vegetables Shred, chop, or slice your vegetables according to the recipe. For sauerkraut, shred the cabbage and mix in 2 to 3% salt by weight. Care and cleaning

A stoneware crock is low-maintenance, but a few habits will keep it in good shape for years.

After each batch Empty the crock, scrape out any residue, and wash with hot soapy water. A soft brush or sponge works well. Avoid abrasive scrubbers that can scratch the glaze. Rinse thoroughly and allow the crock to air-dry completely before storing. Trapped moisture in a sealed cabinet can encourage mildew on the exterior.
Removing stains and odors Kimchi and turmeric can stain the interior of a light-colored crock. Soak the crock overnight with a solution of baking soda and warm water (2 tablespoons per liter). For persistent odors, fill the crock with water and add a splash of white vinegar. Let it sit for several hours, then rinse. Stains on stoneware are cosmetic and do not affect food safety or flavor.
Storing the crock Store the crock with the lid off or ajar to allow air circulation. Place a cloth or paper towel between the lid and the crock body if you stack them to prevent chipping.   • Never expose a cold crock to boiling water or move it directly from a cold garage to a hot oven. Thermal shock can crack stoneware instantly. Let the crock come to room temperature before washing with hot water.
  • Do not put a large stoneware crock in the dishwasher. The weight can damage dishwasher racks, and the tight quarters increase the risk of chipping the rim or moat. Hand washing is safer for both the crock and the dishwasher.
  • Avoid using bleach inside a fermenting crock. Bleach can be absorbed into micro-pores in the glaze and is difficult to rinse out completely. Residual bleach will interfere with your next ferment. Hot water, soap, and baking soda handle anything a crock needs.

Common problems and fixes

Most crock problems have simple solutions. Here are the issues fermenters run into most often.

Mold on the surface (open crocks) Mold grows when the surface of the ferment is exposed to air. In an open crock, this is the most common issue. Skim any mold from the surface, remove and rinse the weights, and re-submerge the vegetables. The ferment below the brine line is almost always fine. To prevent recurrence, make sure the weights are fully submerged and check every 2 to 3 days. Switching to a water-seal crock eliminates this problem for most people.
Cracked or chipped weights Ceramic weights can crack from drops, impacts, or thermal shock. A cracked weight is still usable if the crack is clean and the pieces fit together without crumbling. Replace weights that have chipped or lost fragments, as loose ceramic chips can end up in your food. Buy a spare set of weights when you purchase your crock so you have a backup ready.
Moat water evaporating too fast In dry climates or heated winter rooms, the moat can dry out in 3 to 4 days. Top off with plain water whenever the level drops below the halfway point of the channel. Kahm yeast (white film) Kahm yeast is a harmless but unappetizing white film that can form on the surface of vegetable ferments. It thrives in the presence of oxygen. In an open crock, skim it off and make sure the weights fully cover the vegetables. In a water-seal crock, kahm yeast is rare but can appear if the moat runs dry. It does not make your ferment unsafe, but it can produce off-flavors if left to accumulate over many days.
