Jun is a fermented tea made from green tea and raw honey, cultured by its own dedicated symbiotic colony of bacteria and yeast. It’s often called the champagne of kombucha for its light body and fine effervescence — but it is a distinct ferment, not simply kombucha with honey poured in. Understanding that difference is the key to brewing it well.
What is Jun?
Jun (sometimes written Jun tea or honey kombucha) is a close cousin of kombucha. Where kombucha ferments black tea and cane sugar, Jun ferments green tea and raw honey. The result is lighter, crisper, and less acidic — brighter on the palate with a delicate, wine-like effervescence that earns it the champagne comparison.
Its origins are usually traced to Tibet, where it was reportedly valued as a prized elixir, though much of that history is anecdotal. What isn’t in doubt is that Jun behaves differently from kombucha in the jar: it works faster, prefers cooler conditions, and carries a subtler flavour that’s easily overwhelmed by heavy flavourings.
Jun vs kombucha: the real differences
The two drinks share a family resemblance, but nearly every input and output differs. Crucially, Jun is not honey-flavoured kombucha — the ingredients and the culture are different from the very first day of fermentation.

Why you can't just swap honey into a kombucha SCOBY
The most common misunderstanding is thinking you can make Jun by feeding your existing kombucha SCOBY honey instead of sugar. In practice this fails, and the reason is honey itself.
Honey is naturally antimicrobial. It’s very low in water, mildly acidic, and contains enzymes that produce small amounts of hydrogen peroxide — properties that let it resist spoilage for years. It also carries its own population of wild yeasts and microbes. That microbial payload is exactly why raw honey doesn’t sit comfortably with a traditional kombucha SCOBY: honey’s own microbes and antimicrobial compounds interfere with the specific bacteria and yeast that culture relies on.
Green tea compounds the mismatch. It offers a different nutrient profile than the black tea a kombucha SCOBY is used to, so even setting honey aside, the culture is working in unfamiliar conditions. Faced with both changes at once, a kombucha SCOBY typically ferments weakly, sluggishly, or stalls — and a stalled, under-acidified brew is a mould risk. A true Jun culture, by contrast, has been conditioned to thrive on precisely this pairing.
Temperature and timing
Jun likes it cooler and moves quicker than kombucha. Push it too warm and it sharpens up, losing the delicacy that defines it.
Aim for a range of about 68–75°F (20–24°C), with 70°F (21°C) a reliable sweet spot. Because Jun ferments so quickly, start tasting early — often by day three — and bottle as soon as the balance of sweet and tart is where you want it. Cooler rooms stretch the timeline out and tend to produce a more balanced, less aggressive result.

Common Jun mistakes
Watch for
- Trying to brew Jun by swapping honey into a kombucha SCOBY — honey's antimicrobial properties suppress that culture, giving a weak or stalled ferment.
- Using pasteurised or heavily processed honey — heating strips the wild yeasts and enzymes a Jun culture feeds on, giving a flat, lifeless brew. Use raw honey.
- Boiling or scalding the honey — high heat destroys its beneficial microbes and enzymes. Dissolve it into cooled tea, never hot.
- Fermenting too warm — Jun turns sharp and vinegary above its comfortable range; keep it around 70°F (21°C).
- Over-flavouring — Jun is delicate and bold additions bury it. Reach for subtle pairings.

How to brew Jun, step by step
Once you have a live Jun culture and its starter liquid, the process mirrors kombucha but runs cooler and faster.
- 1Brew and cool the green tea Steep green tea in hot (not boiling) water, then let it cool completely to room temperature. Green tea scorches easily, so keep the water below a full boil.
- 2Dissolve in raw honey Stir raw honey into the cooled tea until fully dissolved. Never add honey to hot tea — heat kills the wild yeasts and enzymes you want to keep. A rough starting point is about 1 cup honey per gallon of brew.
- 3Add the Jun culture and starter liquid Combine the sweetened tea with your Jun culture and its strong starter liquid in a clean jar. The starter liquid drops the pH straight away and protects the batch.
- 4Cover and ferment cool Cover with a breathable cloth secured with a band, and keep the jar around 70°F (21°C), out of direct sun. Airflow lets the culture build its new layer.
- 5Taste from day three Jun is fast — begin tasting around day three. Bottle once it hits the sweet-tart balance you like, usually within 3–6 days.
- 6Second ferment for fizz (optional) Bottle in airtight bottles, optionally with a subtle flavouring, and leave 1–3 days at room temperature to carbonate before refrigerating.
Sourcing a Jun culture
Because a kombucha SCOBY won’t stand in for it, you need an actual Jun culture to start. Unlike kombucha, you can’t reliably grow one from a supermarket bottle — Jun is far less common commercially.
Want a honey note without Jun? Use second fermentation
If you love the idea of honey but aren’t ready to source a Jun culture, there’s a simple, safe path with ordinary kombucha: add honey during the second fermentation.
The reason this works — where feeding honey to the SCOBY doesn’t — is contact. In second fermentation the SCOBY has already been removed and first fermentation is complete. You’re stirring honey into finished, bottled kombucha, so honey’s antimicrobial properties never reach the living culture and can’t suppress it. The residual yeast in the liquid ferments the honey’s sugars in the sealed bottle, giving both a gentle honey flavour and extra carbonation.
This gives you honey-flavoured kombucha — a genuinely different thing from Jun, but an easy way to enjoy honey in your brew without a second culture to maintain.
