A SCOBY is a living culture, so storing one is really about keeping it fed and comfortable until you brew again. For a short pause you can leave it where it is. For a longer break you build a SCOBY hotel. And when you want to store a culture for months, mail it, or give one away, you can dehydrate it into a dried disc that rehydrates back to life. This guide covers all three, plus the handful of mistakes that actually kill a SCOBY.
Short breaks vs long breaks
How you store a SCOBY depends entirely on how long you’re stepping away. The culture is happiest submerged in acidic starter tea at room temperature, so the shorter the break, the less you need to do.
Setting up a SCOBY hotel
A SCOBY hotel is simply a large glass jar where you keep spare SCOBYs in a reserve of strong starter tea. It’s your backup supply, your surplus-culture storage, and the easiest way to keep SCOBYs healthy through a long break.
- 1Choose a large glass jar Use a wide-mouth glass jar big enough for your SCOBYs plus plenty of liquid. Never use metal or reactive containers — the acids in kombucha corrode metal and can harm the culture.
- 2Add your SCOBYs and starter tea Place the SCOBYs in the jar and cover them completely with strong starter tea — finished, unflavoured kombucha from a recent batch. The more acidic liquid, the better protected the cultures.
- 3Cover with breathable cloth Secure a tight-woven cloth, paper towel, or coffee filter over the mouth with a rubber band. This lets the culture breathe and keeps out fruit flies and dust. Never use a solid, airtight lid.
- 4Keep it at room temperature Store the jar out of direct sunlight at normal room temperature. This keeps the cultures gently active rather than dormant.
- 5Feed it monthly Roughly once a month, pour off some liquid and add fresh sweetened tea (brewed, sugared, and fully cooled) to feed the cultures. Without food the hotel becomes overly acidic and the SCOBYs eventually starve.
As batches produce new layers, peel off the oldest and add them to the hotel. A hotel that’s fed and topped up can hold healthy SCOBYs for years.
Keeping a hotel healthy long-term
A hotel is low-maintenance, not no-maintenance. A few habits keep it productive indefinitely rather than slowly souring into a jar you’re afraid to open.
Can you store a SCOBY in the fridge?
You can refrigerate a SCOBY, but it’s a compromise rather than the recommended method. Cold slows the culture to a near-standstill, which sounds convenient but comes with trade-offs: yeast can drop out of suspension, and refrigerated SCOBYs sometimes wake up sluggish or struggle to restart at all.
If you do use the fridge, keep the SCOBY fully submerged in starter tea in a covered, non-airtight container. When you’re ready to brew again, take it out and run one or two reactivation batches at room temperature before expecting a normal fermentation. A room-temperature hotel is a more reliable choice for most brewers taking a break.

Dehydrating a SCOBY for long-term storage
Drying a SCOBY turns it into a leathery disc that stores for months in almost no space — ideal for travel, mailing a culture to a friend, or gifting. The critical rule is temperature: the cultures survive gentle drying but die if they get hot, so keep everything below 95–100°F (35–38°C).
- 1Start with a healthy SCOBY Use a clean, healthy SCOBY with no mould. Blot off excess liquid with a clean cloth or paper towel — a thinner layer dries faster and more evenly.
- 2Air-dry method Lay the SCOBY on parchment or a clean plate in a warm, dry, well-ventilated spot out of direct sun. Flip it daily. Over 1–3 weeks it dries into a thin, leathery, jerky-like sheet.
- 3Or use a dehydrator / low oven To speed things up, use a food dehydrator or oven set as low as it will go — but only if you can hold it below 95–100°F. Higher heat kills the yeast and bacteria and leaves you with a dead disc.
- 4Check it is fully dry It should feel dry and leathery all the way through, with no soft or damp spots that could grow mould in storage.
- 5Store it cool and dark Wrap in parchment or place in a paper bag or loosely covered container. Keep it somewhere cool, dark, and dry. Avoid sealing it airtight while any moisture remains.
Rehydrating a dried SCOBY
Waking a dried SCOBY is essentially brewing a starter batch and being patient. It won’t produce drinkable kombucha on the first go — that first fermentation is purely to reactivate the culture.
- 1Brew and cool sweet tea Make a batch of sweetened tea and let it cool completely to room temperature. Heat will shock the reviving culture.
- 2Add strong starter tea Mix in a generous amount of starter tea or raw, unflavoured store-bought kombucha. This drops the pH and protects the vulnerable culture as it comes back to life.
- 3Submerge the dried SCOBY Slip the dried disc into the liquid and cover the jar with a breathable cloth secured with a band.
- 4Keep it warm and wait Leave it at warm room temperature out of direct sun. Over a few days it rehydrates, and within about 1–3 weeks a new, healthy layer should begin forming on top.
- 5Treat the first batch as a reset Discard that first reactivation brew or save it as starter tea. Once a fresh layer has formed and fermentation is active, you can brew normally.
What NOT to do
Most dead SCOBYs are killed by storage mistakes, not bad luck. Avoid these and your culture will keep coming back.
Watch for
- Never freeze a SCOBY — freezing ruptures the cells and usually kills or badly weakens the yeast and bacteria
- Never seal the jar airtight — the culture needs oxygen and produces gas; always use a breathable cover
- Never use metal jars, lids, or utensils — kombucha acids react with metal and can harm the culture
- Never dry at high heat — anything above about 100°F cooks the cultures and leaves a lifeless disc
- Never store a SCOBY with too little liquid — an exposed, drying top invites mould
