Best Teas for Kombucha: Black, Green, Oolong & What to Avoid

Your SCOBY is a symbiotic culture of bacteria and yeast, and it depends on specific compounds in Camellia sinensis tea to stay healthy. Three nutrients do the heavy lifting: caffeine drives bacterial metabolism and yeast activity, tannins (polyphenols) provide structure for pellicle formation, and nitrogen compounds supply the building blocks bacteria need to reproduce.

All four Camellia sinensis teas (black, green, oolong, white) contain these compounds in varying concentrations. Oxidation level during processing determines the ratio. Black tea is fully oxidized and highest in tannins and caffeine, while white tea is minimally processed and has the least. Herbal infusions like chamomile, rooibos, and peppermint come from entirely different plants and lack most or all of these compounds, which is why they cannot sustain a SCOBY long-term.

Tea quality matters too. Loose-leaf generally outperforms bagged tea because whole leaves retain more of their natural oils, polyphenols, and nitrogen. Cheap dust-grade tea bags still work, but the flavour will be flatter and nutrient delivery less consistent.

One common misconception is that the SCOBY “eats” the tea. It does not consume the leaves or liquid directly. The dissolved compounds from steeping create an environment the bacteria and yeast thrive in. Sugar is the primary food source, and tea provides the supporting nutrients and conditions.

All four types of Camellia sinensis tea work for kombucha, but they differ in how much support they give the SCOBY and the flavour they produce. Oxidation during processing is the deciding factor. More oxidation means more tannins, more caffeine, and a bolder kombucha. Here is how they compare, from strongest to most delicate.

If you are just starting out, begin with 100% black tea for your first several batches. Once your SCOBY is well established and you have a backup culture in a hotel, experiment with green, oolong, or blends. Black tea ranks first not because it tastes “better” but because it is the most forgiving and reliable option for both SCOBY health and flavour predictability.

Black tea is fully oxidized, giving it the highest concentration of tannins and a strong caffeine content. These two properties make it the most dependable tea for kombucha. Your SCOBY grows faster, the pellicle forms thicker, and the resulting kombucha has the bold, tart flavour most people associate with the drink.

Not all black teas are identical though. Single-origin varieties each bring a distinct character, and knowing the differences helps you choose the flavour direction you want. Any plain, unflavoured black tea will work. The varieties below are the most commonly used and widely available.

Use 4–8g of loose-leaf black tea (or 2–4 bags) per litre of water. Steep for 5–7 minutes in freshly boiled water, then cool the sweet tea completely to room temperature before adding your SCOBY and starter liquid. Never add a SCOBY to hot tea. Temperatures above 35°C (95°F) will kill the culture.

Green tea is unoxidized, preserving more catechins and L-theanine but containing less caffeine and fewer tannins than black tea. Oolong falls between the two. It is partially oxidized, with a flavour complexity that ranges from floral to toasty depending on the cultivar and processing.

Both teas make excellent kombucha, but each behaves differently during fermentation.

Green tea kombucha ferments more slowly than black tea kombucha under the same conditions. Expect an extra day or two to reach the same level of tartness. Oolong ferments at a pace closer to black tea, making it a good bridge if you are transitioning to lighter teas.

Steep green tea at a lower temperature than black tea. Water at 75–80°C (170–175°F) prevents bitterness. Over-extracted green tea produces an unpleasantly astringent kombucha base. Oolong does best at 85–90°C (185–195°F).

Not every tea-like beverage belongs in your brewing vessel. The rule is simple: if it does not come from the Camellia sinensis plant, do not use it for primary fermentation. The following will weaken your SCOBY, introduce harmful compounds, or stall fermentation entirely.

Save these for second fermentation (2F). Once the kombucha is bottled and separated from the SCOBY, you can add herbal infusions, spices, or flavoured tea bags without risking your culture. Your SCOBY stays safe in the brewing vessel for the next batch.

There is one partial exception: yerba mate. Although it is not Camellia sinensis, yerba mate contains caffeine, tannins, and nitrogen in quantities similar to green tea. Experienced brewers have used it successfully, but it remains less predictable than true tea. If you try it, keep a backup SCOBY on black tea and monitor closely for the first three or four batches.

Blending different teas is where kombucha brewing gets creative. The principle is simple: keep enough black tea in the blend to sustain the culture, and use green, oolong, or white tea to steer the flavour. Most experienced home brewers settle on a blend rather than a single tea because it gives them more control over both SCOBY health and taste.

When experimenting with blends, change only one variable at a time and keep a backup SCOBY in a hotel fed with plain black tea. That way you always have a healthy culture to fall back on if a blend does not perform as expected.

Oxidation level is the single biggest driver of flavour in your finished kombucha, more so than sugar ratio, fermentation time, or temperature. More oxidation means more tannins, more body, and a bolder taste. Less oxidation means lighter, more nuanced flavours. Here is a quick reference for how each tea shapes the final product.

Steep time also matters. A longer steep (7 minutes) extracts more tannins and caffeine, producing a stronger-flavoured kombucha and feeding the SCOBY more aggressively. A shorter steep (3–4 minutes) gives a milder tea base. For most batches, 5–7 minutes is the sweet spot.

Tea quality plays a role too. Loose-leaf produces a more complex flavour than tea bags because larger leaves release their compounds more evenly. Standard tea bags work perfectly well though. Your SCOBY is not picky about leaf grade, only about getting the right nutrients.

Second fermentation flavouring (fruit, juice, herbs, spices) can transform any tea base. A plain black tea kombucha becomes a completely different drink with ginger and lemon added in 2F. Choose your tea for SCOBY health first, and adjust the final flavour during bottling.
