Milk and honey mead is a mead style that uses lactose, the sugar naturally found in milk, to add permanent sweetness and a creamy body that standard mead yeast cannot ferment away. The name nods to the biblical image of abundance, but the actual technique is straightforward homebrew: dissolve lactose powder into a standard honey must and let yeast do the rest. What you get is a rounder, softer mead with a sweetness that stays put without stabilizers or backsweetening.

What milk and honey mead actually is

There are two real variants of this style:

Lactose powder method (common) food-grade lactose is added to a standard honey must. The yeast ferments the honey sugars but leaves the lactose intact, producing a mead with built-in residual sweetness and a fuller mouthfeel. No curdling, no straining.
Actual dairy method (traditional) honey is dissolved directly in milk or whey instead of water. As fermentation drops the pH, the milk proteins curdle and are strained off at racking. The result is silky and subtle but less predictable, and it needs longer aging to mellow any dairy off-notes.

The lactose powder approach is far more common in modern homebrewing because it is simpler, more consistent, and does not risk the funky flavors that can come from fermenting dairy proteins.

Why lactose works in mead

Lactose is a disaccharide that standard brewing yeast (Saccharomyces cerevisiae) cannot break down. It lacks the enzyme lactase needed to split lactose into its fermentable components. This means any lactose you add stays in the finished mead exactly as it went in.

Permanent sweetness unlike honey sugars, lactose will not ferment out, so you do not need sorbate or sulfite to keep the sweetness stable.
Body and mouthfeel lactose adds density and a creamy texture without making the mead syrupy. It is less sweet than sucrose, so the effect is more about mouthfeel than raw sugar flavor.
Gravity impact lactose raises final gravity because it stays dissolved but does not contribute to alcohol. The ABV formula will underestimate slightly, but not enough to matter for practical brewing.

Milk and honey mead recipe

This is a standard-strength lactomead targeting roughly 12% to 14% ABV with noticeable but not cloying sweetness.

Dissolve honey and lactose in warm water, cool to pitching temperature, rehydrate yeast with Go-Ferm, and pitch.

Step-by-step process

    Sanitize everything fermenter, airlock, stirring spoon, hydrometer, and anything that touches the must.

    Dissolve honey and lactose warm about half the water to 100 to 110 degrees F, stir in the honey and lactose until fully dissolved. Do not boil.

Yeast selection for lactomead

Lalvin 71B top pick. Fruity, floral, soft profile that complements the creamy lactose character. Handles nutrient-poor musts well. Tolerance around 14% ABV.
Lalvin D47 more honey-forward and creamy, but temperature-sensitive. Keep fermentation at 60 to 65 degrees F to avoid fusels. Tolerance around 14% to 15% ABV.
K1-V1116 bright and fruity with higher tolerance (up to 18% ABV). Good for a stronger lactomead but less of the soft character 71B brings.
EC-1118 neutral champagne yeast, very high tolerance (18%+ ABV), but strips aroma and flavor. Least suited for a style that depends on honey character showing through.

What does it taste like?

A well-made lactomead drinks smoother and rounder than a standard mead. The lactose softens the honey’s sharpness and adds a creamy finish without the mead tasting like dairy. The sweetness lingers because the lactose cannot ferment out, so the mead reads as medium to sweet even when the honey sugars have fully fermented.

Versions made with actual dairy can pick up a silky texture and subtle tangy notes, but they risk off-flavors (described as old-milk or cheesy) if under-aged. Most brewers who use the dairy method report needing 6 to 8 months of aging before the flavor fully mellows.

Troubleshooting lactomead

  • Stalled fermentation: check nutrient additions, warm the batch 5 to 10 degrees F, and gently rouse the yeast
  • Sulfur smell: usually a sign of nitrogen deficiency. Add nutrients if still in primary

  • Hazy or cloudy: time, cold crashing, or fining with gelatin or bentonite usually clears it

T'ej: a related traditional honey wine

T’ej is a traditional Ethiopian honey wine that shares the milk-and-honey spirit but uses no dairy at all. It ferments honey with water and gesho (Rhamnus prinoides bark or leaves), which acts as a bittering and preservative agent similar to hops. T’ej is traditionally wild-fermented, though home adaptations often use Lalvin D47. It typically reaches 10% to 12% ABV after 5 to 6 weeks of fermentation and drinks with a warm, slightly bitter, honey-forward character.
