“Live and active cultures” is one of the most seen and least understood phrases on a yogurt tub. It refers to the living bacteria that turn milk into yogurt and are still alive when you open the pot. Every real yogurt is made with them, but not every yogurt still has them by the time you eat it. What live and active cultures are
Yogurt is milk fermented by bacteria. Those bacteria eat lactose, produce lactic acid, and thicken and sour the milk into yogurt. “Live and active” means the same bacteria are still alive and capable of fermenting when the yogurt reaches you, rather than having been killed off during processing.
By legal definition in most countries, yogurt must be made with two specific cultures. Everything else, including any added probiotic strains, is on top of that base.

The Live & Active Cultures seal
In the US, the International Dairy Foods Association runs a voluntary Live & Active Cultures seal. It is a quick way to see that a product carries a meaningful count of living bacteria.
Two caveats. The count is measured at the time of manufacture, so numbers fall over the yogurt’s shelf life. And the seal is voluntary, so a live yogurt can lack the seal simply because its maker did not apply. Read it as a helpful signal, not the only proof.
Which yogurts have live cultures
The split that matters is whether a yogurt was heat-treated after culturing. Fermentation always uses live bacteria; the question is whether they survive to the shelf.
Live cultures vs probiotics
The two terms overlap but are not the same. The defining yogurt cultures make yogurt and carry a recognised benefit of their own: they help people digest lactose. Probiotics are specific added strains chosen for particular effects on gut health.
A yogurt can be fully live and active without any added probiotics. If you want targeted probiotic strains, look for named additions like Lactobacillus acidophilus, Bifidobacterium, or Lactobacillus casei on the ingredient list, not just the words “live and active”.
Keeping cultures alive in homemade yogurt
Homemade yogurt is live by default, because you are eating it fresh with nothing done to kill the bacteria. The only real risk is heat. These cultures thrive in a narrow warm band and die if you overshoot it.
- 1Heat the milk, then cool it Heating milk to about 82°C (180°F) improves the set, but you must cool it back down to roughly 43°C (110°F) before adding starter. Starter added to hot milk is dead starter.
- 2Use a live starter A few tablespoons of plain live yogurt, or a packaged culture, seeds the batch. Store-bought works only if it carries live and active cultures — heat-treated yogurt will not culture milk.
- 3Incubate in the sweet spot Hold the milk at 40-45°C (108-113°F) for 5-12 hours. Too cool and it sets slowly and weakly; above about 46°C the bacteria start to die.
- 4Chill to preserve Once set, refrigerate. Cold makes the bacteria dormant but keeps them alive, which is why fridge yogurt stays live for weeks.
- Never pitch starter into milk hotter than about 46°C (115°F) — the most common way home yogurt fails to set.
- Reusing your own yogurt as starter works for several generations, but the culture gradually weakens. Refresh with new starter when sets get slow or thin.
