Pickling and fermenting both turn crisp vegetables into tangy, preserved food — but they get there in opposite ways. In pickling you pour on an acid, almost always vinegar, and the acidity is instant. In fermenting you submerge vegetables in a plain salt brine and wait while live lactic-acid bacteria eat the natural sugars and produce the acid themselves. One is a recipe; the other is a living process.
The core difference: added acid vs made acid
Every pickle is sour because of acid. The only real question is where that acid comes from.
In vinegar pickling, you add the acid. You mix vinegar, water, salt and spices, pour it over the vegetables, and they’re preserved the moment the liquid soaks in. Nothing is alive — the vinegar’s job is actually to stop microbes.
In lacto-fermentation, you make the acid. You submerge vegetables in a salt-water brine with no vinegar at all. Naturally present Lactobacillus bacteria go to work, converting the vegetables’ sugars into lactic acid over days. The brine sours itself, and the food ends up full of live cultures.
That single distinction — added acid versus made acid — drives every other difference in taste, health, speed and storage below.
Pickling vs fermenting, side by side

How they taste
Both are sour, but they’re sour in noticeably different ways. Vinegar pickles hit you with a bright, sharp, immediate acidity — clean and simple, because you added a single acid. That’s exactly what you want on a burger or in a potato salad.
Fermented vegetables taste rounder and more layered. The lactic acid is milder and less aggressive than vinegar, and alongside it the bacteria create a whole range of savoury, tangy, sometimes fizzy flavour notes — the “funk” that makes a proper sour dill or a jar of kraut taste alive. Many people find ferments tangier yet somehow softer and more mellow than vinegar pickles. Neither is better; they simply suit different plates.
Probiotics and health
This is where fermenting pulls clearly ahead for gut health. Because a ferment is a living culture, it delivers live probiotic bacteria along with the vegetables, and fermentation can make certain vitamins and nutrients more available. This is the single biggest reason people choose fermenting over pickling.
Vinegar pickles, by contrast, are almost never probiotic. The vinegar suppresses bacteria by design, and most shelf-stable pickles are heat-processed, which kills anything that might have survived.
Shelf life and storage
The two methods preserve food very differently, and it changes where you can keep the jar.
Vinegar pickling is the winner for pantry storage: properly water-bath-canned jars are sealed and shelf-stable for a year or more unopened. Uncanned “quick pickles” skip the canning step and simply live in the fridge for a few weeks up to a couple of months.
Ferments are preserved by their own lactic acid rather than a sealed can, so once they’ve soured they belong in cold storage. There they keep for several months up to a year, gradually growing softer and more sour as the slow fermentation continues in the cold.
How to make each one
The two workflows look similar in the jar but are fundamentally different in what you’re asking to happen.
Quick vinegar pickle — you’re soaking, not culturing:
- 1Make the brine Combine vinegar, water, salt and sugar/spices. A common all-purpose ratio is roughly equal parts vinegar and water, with salt to taste.
- 2Pack the jar Fill a clean jar with sliced cucumbers, onions, carrots or whatever you like, plus aromatics such as dill, garlic or peppercorns.
- 3Pour and cool Pour the brine over (hot brine for softer, faster pickles; cold for extra crunch), seal, and cool.
- 4Chill and eat Refrigerate. They are tasty within a few hours and hit full flavour in 24–48 hours.
Lacto-ferment — you’re culturing, not soaking:
- 1Weigh a salt brine Dissolve non-iodised salt in water at about 2–3.5% of the water weight — no vinegar. This salt level is what selects the good bacteria.
- 2Submerge fully Pack vegetables in and keep them under the brine with a weight. Anything exposed to air can mould, so submersion is non-negotiable.
- 3Ferment at room temp Leave at 18–22°C for 3–14+ days. You'll see bubbles and the brine turns cloudy and sour as the bacteria work.
- 4Taste, then chill When it's as sour as you like, move it to the fridge to slow the ferment and store it.

So, are pickles fermented?
This is the question that trips everyone up, because the word pickle only means “food preserved in something acidic” — it doesn’t tell you which method was used.
The reality: most pickles you buy are not fermented. The classic supermarket dill in a shelf-stable jar is a vinegar pickle. Only traditional barrel-aged or deli-style “sour” pickles — the ones kept cold and often labelled naturally fermented — are true ferments made in a salt brine.
- Shelf-stable, room-temperature jar with vinegar listed = vinegar pickle, not fermented
- Refrigerated and labelled "naturally fermented" or "live cultures" = a real ferment
- A sour taste alone proves nothing — vinegar tastes sour too
- "Probiotic" claims only count if the product is unpasteurised and kept cold
