Fermenting sauerkraut and other vegetables looks strange while it’s happening — bubbles, cloudiness, films, and smells that change day to day. Almost all of it is normal. This FAQ covers the questions that come up most, with the split opinions flagged honestly where they exist.

Normal vs. a real problem

The fastest way to judge a ferment is to compare what you’re seeing against these pairs.

Kahm yeast Flat, thin, white-to-cream film. Not dangerous — skim it off.
Mold Fuzzy, raised, often green, black, or pink. When confirmed, the safest move is to discard.
Cloudy brine Normal — caused by lactic acid bacteria and CO2 microbubbles.
Putrid smell Not normal, regardless of what else looks fine. Discard.

Troubleshooting the common issues

Slimy texture Usually Leuconostoc bacteria early on, worsened by warm temps or low salt. Fix with non-iodized salt, cooler temps, and 2–3% weighed salt.
Pink or orange color Split guidance — most call it a harmless pigmented yeast safe to skim off, but NC State Extension calls pink kraut a sign of improper fermentation. Take the cautious view and discard if unsure. If your batch used red cabbage or beets, that color is just normal vegetable pigment.

The safety basics

Salt Never cut back on the salt a recipe calls for. It steers safe fermentation, not just flavor.
Botulism No documented case from properly made fermented vegetables. C. botulinum cannot grow below pH 4.6, and sauerkraut reaches well below that.
Fermenting without salt Possible but riskier — salt slows fermentation and inhibits mold, so salt-free batches should ferment only 2–3 days under close watch.

Mason jar or a dedicated crock?

Mason jars are a fully acceptable fermenting container, though they may see slightly more spoilage loss than a weighted crock. What actually matters is a food-grade material, full submersion under the brine, and a way for gas to escape — either an airlock or manual burping. Is fermenting the same as pickling?

Frequently asked questions

What is kahm yeast, and is it the same as mold?+

No. Kahm yeast is a flat, thin, white-to-cream film on the brine surface, and it isn't dangerous — skim it off and keep going. Sandor Katz puts it plainly: kahm yeast growth is not a problem, skim it off as best you can and enjoy your kraut. Mold looks different: it's fuzzy, raised, and often colored green, black, or pink.

I found mold on my sauerkraut — skim it off or throw the batch out?+

Guidance is genuinely split. UC Davis says any confirmed mold means discard the batch immediately. Oregon State and UC Master Food Preserver programs say small surface patches can be skimmed off small ferments, while large amounts mean discard. Ohio State recommends cutting at least an inch around any mold to remove all the hidden hyphae. When you're unsure which camp to follow, the safest fallback is: when in doubt, throw it out.

Why is my sauerkraut brine cloudy?+

Cloudy brine is normal. It's caused by lactic acid bacteria and tiny CO2 bubbles, which is actually a sign that fermentation is active and working. It's only a concern if it comes paired with a putrid smell, mold, or an unusual color.

Why is my sauerkraut slimy?+

Slime is mainly caused by Leuconostoc bacteria early in fermentation, and it gets worse with warm temperatures or too little salt. Most fermentation educators call it cosmetic and safe, though Oregon State Extension treats it as a spoilage sign to discard — both views are worth knowing. To prevent it, use non-iodized salt, ferment somewhere cooler (65–70°F), and weigh your salt at 2–3%.

How long does sauerkraut take to ferment?+

NCHFP guidance is 3–4 weeks at 70–75°F, or 5–6 weeks at 60–65°F — below 60°F it may not ferment at all. "Done" is really a taste call: it's edible from about 5–7 days in, and reaches a deep sour flavor after 4–6+ weeks.

How much salt does sauerkraut actually need?+

NCHFP guidance is firm on this: never cut back on the salt a recipe calls for, since it's vital to safety, not just flavor. The standard range is 1.5–3% for dry-salted sauerkraut and kimchi, and 3.5–5% brine for pickles. Always use non-iodized salt without anti-caking agents.

Is there a real risk of botulism from homemade sauerkraut?+

Essentially zero when made correctly. USDA microbiologist Fred Breidt has said there has never been a documented case of foodborne illness from fermented vegetables — it's one of the oldest and safest food technologies we have. C. botulinum simply cannot grow below pH 4.6, and properly made sauerkraut reaches well below that.

How long does sauerkraut last, and how should I store it?+

NCHFP says fully fermented kraut keeps refrigerated for several months, or can be canned for longer storage. In practice, most people get 4–6 months in the fridge, kept submerged in its own brine below 40°F. It can also be frozen for 8–12 months, though freezing kills the live probiotics and softens the texture.
