Fermenting sauerkraut and other vegetables looks strange while it’s happening — bubbles, cloudiness, films, and smells that change day to day. Almost all of it is normal. This FAQ covers the questions that come up most, with the split opinions flagged honestly where they exist.
Normal vs. a real problem
The fastest way to judge a ferment is to compare what you’re seeing against these pairs.
Kahm yeast Flat, thin, white-to-cream film. Not dangerous — skim it off.
Mold Fuzzy, raised, often green, black, or pink. When confirmed, the safest move is to discard.
Cloudy brine Normal — caused by lactic acid bacteria and CO2 microbubbles.
Putrid smell Not normal, regardless of what else looks fine. Discard.
Troubleshooting the common issues
Slimy texture Usually Leuconostoc bacteria early on, worsened by warm temps or low salt. Fix with non-iodized salt, cooler temps, and 2–3% weighed salt.
Pink or orange color Split guidance — most call it a harmless pigmented yeast safe to skim off, but NC State Extension calls pink kraut a sign of improper fermentation. Take the cautious view and discard if unsure. If your batch used red cabbage or beets, that color is just normal vegetable pigment.

The safety basics
Salt Never cut back on the salt a recipe calls for. It steers safe fermentation, not just flavor.
Botulism No documented case from properly made fermented vegetables. C. botulinum cannot grow below pH 4.6, and sauerkraut reaches well below that.
Fermenting without salt Possible but riskier — salt slows fermentation and inhibits mold, so salt-free batches should ferment only 2–3 days under close watch.
Mason jar or a dedicated crock?
Mason jars are a fully acceptable fermenting container, though they may see slightly more spoilage loss than a weighted crock. What actually matters is a food-grade material, full submersion under the brine, and a way for gas to escape — either an airlock or manual burping. Is fermenting the same as pickling?
No. Fermenting produces acid internally through bacteria over days to weeks and keeps live probiotics; pickling adds vinegar externally over hours to days and is usually not probiotic. For the full comparison, see pickling vs fermenting.
