Oat Milk Kefir: How to Make It

Live kefir grains and powdered starters both contain a mix of bacteria and yeasts that ferment sugar into acid, gas, and flavor compounds. Dairy milk feeds them with lactose; oat milk instead offers the natural carbohydrates from the oats themselves, which the culture can still use, just at a different rate than lactose.

That difference is why oat milk kefir sometimes ferments a bit differently in texture and speed than dairy kefir, even on the same schedule.

   Check the carb content Make sure your oat milk has at least 8g of carbohydrate per quart. If not, add a teaspoon of sugar, date paste, or a prebiotic supplement.

   Combine milk and culture Add 2–3 tablespoons of live kefir grains, or one packet of powdered starter, to 1 quart of oat milk in a clean glass jar.

   Cover and rest Cover with a lid or breathable cloth and let it sit at room temperature for 18–24 hours.

   Check for tartness The batch is ready once it tastes tart and slightly sour. It may separate into curds and a thinner liquid — this is normal.

   Strain and store If using live grains, strain them out and refrigerate the kefir. If using powdered starter, no straining is needed; just refrigerate.

Oat milk has no lactose, so grains fed only oat milk over many consecutive batches will gradually weaken and slow down. If you make oat milk kefir often with live grains, alternate with a batch or two of regular dairy milk to keep the grains properly fed.
