Mead is fermented, not distilled

Because fermentation stops when the alcohol level gets too high for the yeast, undistilled mead lands at wine-like strengths, typically 6–20% ABV. If a mead is stronger than that, it’s been fortified or distilled — not simply fermented.

How much spirit does a gallon of mead make? Distilling can’t create alcohol; it only concentrates what fermentation made. The ceiling is the pure alcohol already in the mead:

Licensed distillers end up with less than this, because the first and last parts of a run are discarded and some alcohol is lost along the way. That is why honey brandy is a small-volume, premium spirit: a whole carboy of mead becomes only a few bottles.

The legal side
This is the important part. In many countries — including the United States — distilling alcohol at home for personal use is illegal without a federal permit, even though home fermentation of mead, wine, and beer is perfectly legal.

Getting a stronger mead without distilling
If you want a mead stronger than normal fermentation allows, distillation isn’t the only route — and usually isn’t the legal one. Fortifying blends a distilled spirit into finished mead to raise its strength and sweetness, much like port is fortified wine.
For maximising strength within fermentation, a high-tolerance yeast (like EC-1118) plus step-feeding honey can push a mead toward 18–20% ABV — the practical ceiling without distilling or fortifying.
