Mead ABV & Alcohol Content Explained: Ranges, Formula & How to Hit a Target

Mead alcohol content can land anywhere from a light session drink to something stronger than most wines. Where your batch ends up depends almost entirely on how much honey you start with and which yeast you use to ferment it. This guide covers the formula, the ranges, and the decisions that set your ABV before you even pitch.

Mead ABV ranges by style

The BJCP organizes mead by two independent axes: strength and ingredients. Strength tiers determine ABV range; ingredient categories (melomel, metheglin, braggot) can land in any strength tier.

3.5%–7.5% hydromel / session mead
7.5%–14% standard traditional mead
14%–18%+ sack mead

Braggots (malt-honey hybrids) typically run 6% to 12% since malt dilutes honey’s gravity contribution. Commercial meads span the full range but lean toward 8% to 14% for approachability, while homebrewers more freely push into sack territory.

The ABV formula: OG, FG, and 131.25

The standard gravity-drop estimate is the workhorse of homebrew ABV measurement:

ABV = (OG minus FG) times 131.25

OG is the specific gravity of the must before you pitch yeast. FG is the gravity once fermentation stabilizes. The difference represents the sugar that was converted to alcohol, and 131.25 is the conversion factor.

Accuracy this formula is accurate to roughly plus or minus 0.2% up to about 10% ABV. At mead and sack strengths, alcohol affects the hydrometer reading itself, so some calculators use a more precise polynomial formula for high-gravity batches.
Worked example OG 1.102, FG 1.012: gravity drop is 0.090, times 131.25 equals 11.8% ABV.

What sets mead alcohol content

Two decisions account for most of the variation in mead ABV: how much honey you add and which yeast you choose.

Honey load honey contributes roughly 35 to 37 gravity points per pound per gallon. More honey means a higher OG and a higher potential ABV.
Yeast tolerance every strain has an alcohol ceiling. Lalvin 71B tops out around 14%, D47 around 15%, EC-1118 around 18%. If OG exceeds the strain tolerance, fermentation stalls and leaves residual sweetness.
Nutrients honey is nutrient-poor. Without staggered nitrogen additions (TOSNA or Fermaid-O protocol), yeast often stalls before reaching its nominal tolerance, especially above 12% target ABV.
Temperature fermenting within the yeast recommended range prevents stress-induced stalling and controls fusel and ester production. Too warm produces hot, harsh alcohol character.

Typical OG and FG by strength

These are rough targets for planning a batch. Actual readings depend on honey variety, water volume, and how dry the yeast ferments.

Measuring ABV at home: hydrometer vs refractometer

Hydrometer floats in a test jar and reads specific gravity directly. Accurate for both OG and FG. Needs a full sample (about 100 to 200 ml). The standard tool for final gravity and bottling decisions.
Refractometer reads Brix from a single drop. Fast and convenient for OG. Once alcohol is present, readings skew and require a correction formula. Best used for OG; switch to hydrometer for FG.

How to hit a target ABV
