Mead alcohol content can land anywhere from a light session drink to something stronger than most wines. Where your batch ends up depends almost entirely on how much honey you start with and which yeast you use to ferment it. Mead ABV ranges by style
The BJCP organizes mead by two independent axes: strength and ingredients. Strength tiers determine ABV range; ingredient categories (melomel, metheglin, braggot) can land in any strength tier.
Braggots (malt-honey hybrids) typically run 6% to 12% since malt dilutes honey’s gravity contribution. Commercial meads span the full range but lean toward 8% to 14% for approachability, while homebrewers more freely push into sack territory.
The ABV formula: OG, FG, and 131.25
The standard gravity-drop estimate is the workhorse of homebrew ABV measurement:
ABV = (OG minus FG) times 131.25
OG is the specific gravity of the must before you pitch yeast. FG is the gravity once fermentation stabilizes. The difference represents the sugar that was converted to alcohol, and 131.25 is the conversion factor.

Two decisions account for most of the variation in mead ABV: how much honey you add and which yeast you choose.

These are rough targets for planning a batch. Actual readings depend on honey variety, water volume, and how dry the yeast ferments.

Measuring ABV at home: hydrometer vs refractometer
Most meadmakers use a refractometer during active fermentation for quick spot checks and a hydrometer for the final gravity reading that determines ABV and bottling readiness.
How to hit a target ABV
- 1Pick your target ABV and style decide whether you want a dry, medium, or sweet finish. This determines both OG and yeast choice.
- 2Calculate OG from target ABV for a dry finish, target OG is roughly (ABV / 131.25) + 1.000. For a sweet finish, add the residual gravity you want on top.
- 3Choose yeast by tolerance pick a strain whose tolerance clears your target for a dry mead, or one that stalls near your target for natural residual sweetness.
- 4Add honey to hit OG dissolve honey until a hydrometer confirms the target gravity. Roughly 1 pound per gallon adds 35 to 37 points.
- 5Follow a nutrient schedule staggered nutrient additions (TOSNA or Fermaid-O) keep the yeast healthy enough to actually reach its tolerance.
Legal notes: when mead becomes wine
In the United States, the TTB regulates mead as wine since it is derived from honey. Below 7% ABV, labeling falls under FDA rules. At 7% and above, TTB jurisdiction applies, including the mandatory health warning statement. Any mead exceeding 14% ABV or containing ingredients beyond standard parameters must be labeled as specialty wine with a composition statement.
These thresholds matter mainly for commercial production. Homebrewers in most US states can produce mead for personal consumption without a license, subject to federal and state volume limits.
