Fermented hot sauce starts with a pepper mash — fresh chillies salted at 2–5% of their weight and left to sour under their own brine for one to four weeks. The salt and the wild lactic bacteria on the peppers do the work: acidity builds, raw heat mellows into something rounder and funkier, and only then do you blend, strain, and add vinegar to taste and to lock in a safe, shelf-stable pH.
How much salt: the 2–5% window
Salt is the one number you can’t guess at. It selects for lactic acid bacteria while holding back mould and spoilage organisms, and it keeps pepper tissue firm so the ferment doesn’t turn to mush. For hot sauce you’re working in a 2–5% window, measured as a percentage of the total weight of everything going in — peppers plus any garlic, onion, carrot, or fruit.
Most home batches land at 2.5–3%. Lower than 2% and you risk soft peppers, off-fermentation, and mould in warm weather; above 5% the ferment crawls and the sauce tastes aggressively salty. Mash vs whole-pepper brine
There are two ways to set up the ferment, and the choice shapes both flavour and how much babysitting the jar needs.
For a mash, weigh the peppers, calculate the salt, and combine. For a brine, weigh the water and dissolve salt at 3.5–5% (35–50g per litre) — the peppers absorb some, so the effective concentration settles lower. Either way the goal is the same: everything wet, everything under the surface, no air.
Step-by-step: pepper mash to hot sauce
- 1Prep the peppers Wash and de-stem 500g–1kg of chillies. Wear gloves for anything hotter than a jalapeño. Leave seeds in for heat, remove for a smoother sauce. Add aromatics now — garlic, onion, a little carrot or fruit for sweetness.
- 2Weigh and salt Weigh everything together, then add 2.5–3% of that weight in non-iodized salt. Pulse in a food processor to a coarse mash, or chop and pack tightly into a clean jar.
- 3Submerge and weight Press the mash down so brine rises above it. Use a fermentation weight or a brine-filled bag to keep everything under the surface. Leave 3–5cm of headspace.
- 4Ferment 1–4 weeks Keep at 18–22°C out of direct sun. Use an airlock or burp the jar daily for the first week — it will bubble actively. Stir a mash back under if it separates.
- 5Taste from day 7 It’s ready when it smells pleasantly sour, the fizzing has calmed, and the raw bite has softened. Go longer for deeper, funkier flavour.
- 6Blend and strain Blend the mash (reserve some brine to thin it). Leave it chunky, or strain through a sieve for a smooth pourable sauce. Save the strained solids for a pepper paste.
- 7Acidify and bottle Stir in vinegar to taste, check the pH is below 4.0, and bottle. Refrigerate, or keep on the shelf if fully acidified.
How long to ferment
There’s no single finish line — fermentation time is a flavour dial, not a countdown. Shorter gives you a bright, punchy, vinegary-fresh sauce; longer builds mellow, complex, umami-rich depth as acids develop and heat integrates.
Warmth speeds everything up: a jar at 24°C may be ready in ten days, while a cool 16°C room can take a month for the same result. Trust your senses over the calendar — active bubbling that has slowed to a trickle, a clean sour aroma, and a taste that no longer makes you wince from raw pepper all say it’s done.
Blending, straining & adding vinegar
Once the ferment tastes right, the sauce is built in three moves: blend, adjust texture, then acidify. Vinegar comes last, never before or during the ferment — its acidity suppresses the lactic bacteria you spent weeks cultivating.
If the sauce is too hot or too salty, this is where you correct it: dilute with more vinegar and a little water, or blend in extra fermented brine. Adding a small amount of sugar or fruit can round out harsh heat without muddying the ferment’s character.
pH & bottling safely
This is the non-negotiable part. A fermented hot sauce is only safe to bottle and store at room temperature once it’s acidic enough to block spoilage bacteria and, above all, Clostridium botulinum. Lacto-fermentation alone typically reaches pH 3.4–3.6, and the added vinegar pushes it lower and guarantees a margin.
- Target pH below 4.0 for shelf stability — aim for 3.4–3.8
- Use a calibrated digital pH meter, not colour strips, before bottling
- Sauces with garlic, carrot, or onion are low-acid — acidify and refrigerate to be safe
- Discard any batch with fuzzy mould, a putrid smell, or a slimy texture
- Never bottle warm sauce in sealed jars and leave it out untested
If you can’t test pH, treat the sauce as a fresh product: keep it refrigerated and use it within a few months. A tested, vinegar-acidified sauce below pH 3.8 keeps 6–12 months and is effectively shelf stable, though the fridge preserves colour and flavour best. A thin white film on a ferment is usually harmless kahm yeast — skim it — but fuzzy, coloured, or raised mould means the whole batch goes.
Fermented salsa: the fast cousin
The same principles make a lively fermented salsa, but on a much shorter clock because you want it fresh and only lightly soured, not deeply fermented. Chop tomatoes, peppers, onion, and garlic, add cilantro and lime if you like, and salt the whole mix at 2–2.5% of its weight.
Pack it into a jar, press it under its own juices, and ferment at room temperature for just 2–4 days, stirring daily and tasting from day two. When it turns pleasantly tangy and faintly fizzy, move it to the fridge — cold halts the ferment and holds it there. Eat within a couple of weeks; unlike hot sauce, salsa isn’t acidified for the shelf, so it lives in the refrigerator and stays best fresh.
