Gruyere is one of the great Alpine cheeses — dense, smooth, and complex, with a flavor that moves from creamy and sweet in young wheels to deeply nutty and crystalline in aged ones. It originated in the medieval town of Gruyeres in the canton of Fribourg, Switzerland, where cheesemakers in mountain dairies turned summer milk into large wheels that could be stored and traded through winter. Today it remains one of the most versatile cheeses in the kitchen, prized for its exceptional melting qualities and its role as the backbone of Swiss fondue. Making it at home is an intermediate project that rewards patience — the real magic happens over months of aging.
What Gruyere cheese is
Gruyere is a hard, washed-rind cheese made from raw or pasteurized cow’s milk. It belongs to the Alpine cheese family alongside Emmental, Comte, and Appenzeller — cheeses born in mountain dairies where large wheels were the standard format for preservation and trade. Traditional Swiss Gruyere (Gruyere AOP) is still made in village dairies in western Switzerland from raw milk, using copper vats and natural thermophilic cultures.
The defining features are its dense, smooth paste with few or no eyes (unlike Emmental), its washed rind (rubbed with brine during aging to develop flavor and the characteristic brownish crust), and its complex flavor that evolves dramatically with aging.
How flavor develops with aging
During aging, enzymes from the thermophilic culture and residual rennet break down casein into amino acids and peptides, creating the increasingly complex flavors. The brine washing encourages beneficial surface bacteria (Brevibacterium linens and related species) that contribute earthy, savory notes and the characteristic brownish rind.
How to make Gruyere at home
This process uses about 8 L (2 gallons) of whole milk. Scale proportionally for larger batches. Gruyere traditionally uses raw milk, but whole pasteurized (not UHT) works at home with the addition of calcium chloride.
- 1Heat and culture Warm milk to 32°C (90°F) in a water bath. Add 1/4 teaspoon calcium chloride (diluted in 60 mL water) if using pasteurized milk. Sprinkle 1/4 teaspoon thermophilic culture (Streptococcus thermophilus and Lactobacillus helveticus) over the surface, let rehydrate 2 minutes, stir gently. Optionally add 1/16 teaspoon Propionibacterium shermanii if you want the few small eyes traditional in some Gruyere. Cover and ripen at 32°C for 15 minutes.
- 2Add rennet and coagulate Dilute 1/2 teaspoon liquid rennet in 60 mL cool unchlorinated water. Stir into milk gently for 1 minute, then stop completely. Let sit undisturbed for 30-45 minutes. Test for a clean break — a knife should split the curd cleanly with clear whey.
- 3Cut curds small Cut the curd mass into small cubes, about 0.6 cm (1/4 inch) or smaller — rice-grain size is the traditional target. This small cut is essential for the dense, smooth texture. Let rest 5 minutes.
- 4Cook curds (high temperature) This is the step that defines Alpine cheeses. Slowly raise the temperature to 54-57°C (129-135°F) over 30-40 minutes, stirring constantly and gently. Increase no more than 1°C every 2 minutes. The high cooking temperature firms the curds significantly and expels much more whey than lower-temperature cheeses. Continue stirring at target temperature for 15-30 minutes until curds are very firm and small.
- 5Press under whey Let curds settle to the bottom. Press them under the whey with a plate or follower for 15-20 minutes while still warm. This helps the curds knit together while maintaining temperature.
- 6Mold and press Transfer the consolidated curd mass to a cloth-lined hard-cheese mold. Press at 9 kg (20 lb) for 30 minutes, flip, press at 14 kg (30 lb) for 2 hours, flip again, press at 23 kg (50 lb) for 12-24 hours. The cheese should be smooth and consolidated with no visible curd boundaries.
- 7Brine Make a saturated brine (about 230 g salt per liter of water). Soak the cheese in cold brine for 12-24 hours (about 3 hours per 0.45 kg / 1 lb of cheese), flipping halfway. This salts the cheese evenly and begins rind formation.
- 8Air dry Place the cheese on a mat at room temperature for 2-3 days, flipping daily, until the surface is dry to the touch.
- 9Age with brine washing Age at 10-16°C (50-60°F) and 90-95% humidity. Wash the rind with a light brine solution (1-2 tablespoons salt per cup of water) every 2-3 days for the first month, then 1-2 times per week after that. Turn the cheese with each wash. Age a minimum of 5 months.

Common problems and fixes
- Cheese cracked during aging: Humidity too low. Gruyere needs 90-95% — higher than most hard cheeses. Add a pan of water to your aging space and monitor with a hygrometer.
- Rind too thick or hard: Not washing frequently enough, or washing with brine that is too salty. Wash every 2-3 days in the first month and keep the brine light (1-2 tablespoons salt per cup).
- Bitter or off flavors: Too much rennet, or contamination during the long aging. Use the correct rennet dose and sanitize all equipment thoroughly. Bitterness can also come from aging too cold.
- Texture too open or holey: Curds not cut small enough or not cooked hot enough. The high cooking temperature (54-57°C) is critical — it drives out whey and creates the dense, smooth paste.
- Bland after 5 months: Use thermophilic culture that includes Lactobacillus helveticus, which drives the complex flavor development during long aging. Also ensure you are brine-washing consistently.
