Halloumi is the Cypriot cheese that browns in a pan instead of melting. The secret is a step no other common cheese uses: after the curd is pressed, it is poached in its own hot whey until it floats. It takes an afternoon, needs rennet but no culture, and the result squeaks just like the shop-bought kind, only fresher and less salty.
Homemade halloumi recipe
- 1Warm and set Warm 4 L of milk to 32°C (90°F). If it is store-bought pasteurized milk, stir in calcium chloride as the bottle directs. Dilute the rennet in a little cool, unchlorinated water, stir it in for one minute, then leave the milk still for 40–45 minutes until it gives a clean break.
- 2Cut and cook Cut the curd into 1–2 cm cubes and rest 5 minutes. Over about 30 minutes, warm the curds slowly to 38–40°C, stirring gently, until they shrink and feel springy.
- 3Press Ladle the curds into a cloth-lined mould or colander, keeping the whey. Press under a moderate weight for about an hour, then cut the slab into pieces about 2 cm thick.
- 4Poach in whey Heat the reserved whey to 85–90°C. Slide in the slabs and poach them for 30–40 minutes, until they float and feel rubbery.
- 5Salt and fold Lift them out, sprinkle with salt and chopped dried mint, fold each piece in half, and leave to cool and firm on a rack.
- 6Store Eat fresh, or store submerged in the cooled whey salted to about 8–10% (80–100 g salt per litre) in the fridge.

Troubleshooting
Watch for
- Curd will not set UHT milk, too little rennet, or no calcium chloride in store-bought milk. Check the dose with the rennet calculator.
- Slabs fall apart in the whey They were not pressed long enough, or the whey is boiling hard. Keep it just below a simmer.
- Melts when grilled It was not poached long enough. Wait until every piece floats and feels springy.
- Too salty after storage Soak in fresh water for a few hours before cooking.
How much milk you need for a target weight is in the milk to cheese calculator. For other firm, brined cheeses, see semi-soft cheese and Greek feta cheese, whose brine section covers salt strengths.
