Colby & Colby Jack Mac and Cheese Recipes

Colby is often called a cousin of cheddar, and that is close to the truth — but the key difference is what happens to the curds. Colby is a washed-curd cheese: after cutting, the curds are rinsed with cool water, which washes away some lactic acid and lactose. The result is a softer, moister, milder cheese than cheddar, with a mellow, slightly sweet flavor and a springy texture that melts beautifully instead of going rubbery.

Colby Jack takes that a step further by marbling Colby together with Monterey Jack, an even milder, buttery, high-moisture cheese. That higher moisture and lower acidity are exactly what you want in a melting cheese — the fat and protein loosen into a smooth flow rather than seizing. The trade-off is that both cheeses are mild, so on their own they can taste a little flat in a big pot of mac. The fix is blending, which is the next section.

Grocery Colby Jack is perfectly good here, but if you make cheese at home — or are deciding how much milk to turn into a batch of Colby or Jack before it ever hits the pot — the yield matters. A rough rule for these washed-curd, high-moisture styles is about 1 kg of cheese per 10 litres of whole cow’s milk, but fat and protein content shift that meaningfully. Size the batch before you start so you end up with enough to both eat and cook with.

When buying, choose a block over a bag of pre-shredded. Block cheese melts into a cleaner sauce because it has no anti-caking coating — more on that below — and it is usually cheaper per gram.

Colby Jack is your base: it delivers the creamy melt and body. Then you layer in cheeses that each do one job — flavor, stretch, or silkiness. A two- or three-cheese blend almost always beats a single cheese.

A reliable everyday blend is roughly two parts Colby Jack to one part sharp cheddar. For a richer, restaurant-style sauce, do half Colby Jack, a quarter sharp cheddar, and a quarter gruyere or fontina, with a single slice of American melted in for insurance.

A cheese sauce is an emulsion: fat and water held together by the cheese’s proteins. Smooth mac keeps that emulsion intact; grainy or oily mac is what happens when it breaks. Two things hold it together — a starch-based béchamel (the roux route) or an emulsifying salt like sodium citrate. And several things break it.

Nail these and you can build mac and cheese without a recipe. The roux ratio scales to whatever volume of sauce you need; the cheese-to-pasta ratio sets how rich it is.

For a thicker baked sauce, push the roux toward 3 tablespoons each of butter and flour per 250 ml of milk. For a looser stovetop sauce, stay at 2 tablespoons each and add a splash more milk at the end.

Fast, creamy, and ready in about 25 minutes. Serves 4.

You’ll need: 250 g (about 2.5 cups dry) elbow macaroni · 30 g (2 Tbsp) butter · 30 g (2 Tbsp) plain flour · 500 ml (2 cups) whole milk, warmed · 225 g (8 oz) Colby Jack, grated · 115 g (4 oz) sharp cheddar, grated · 1/2 tsp salt · 1/4 tsp mustard powder · pinch of white pepper.

1. 1
Boil the pasta Cook the macaroni in well-salted water to just shy of al dente (about 1 minute under the package time — it finishes in the sauce). Drain and set aside.
2. 2
Make the roux In the same pot over medium-low heat, melt the butter, whisk in the flour, and cook 1–2 minutes until it smells nutty but stays pale — a blond roux.
3. 3
Build the béchamel Whisk in the warm milk a little at a time, then simmer gently, stirring, for 3–5 minutes until it thickens enough to coat the back of a spoon. Stir in the salt, mustard powder, and pepper.
4. 4
Melt in the cheese Pull the pot off the heat. Add the grated Colby Jack and cheddar in three or four handfuls, stirring each until fully melted before adding more. The sauce should be glossy and smooth.
5. 5
Combine and adjust Fold in the drained macaroni. If it's tighter than you like, loosen with a splash of warm milk. Taste, adjust salt, and serve immediately while it's at its creamiest.

The same sauce, poured into a dish, topped with buttery breadcrumbs, and baked until bubbling with a golden crust. Serves 4–6.

You’ll need: the full stovetop recipe above (make the sauce a touch looser, as it tightens in the oven) · 60 g (about 1 cup) panko or fresh breadcrumbs · 20 g (1.5 Tbsp) melted butter · 30 g (1 oz) extra Colby Jack or Parmesan, grated · optional 1 Tbsp chopped parsley.

1. 1
Heat the oven Preheat to 190°C / 375°F and lightly butter a baking dish (about 2 L / 2 qt).
2. 2
Loosen the sauce Make the stovetop mac but stop before it fully tightens — add an extra 60–100 ml of milk so the sauce stays pourable. It will firm up as it bakes.
3. 3
Make the topping Toss the breadcrumbs with the melted butter and the extra grated cheese until evenly coated. Stir in the parsley if using.
4. 4
Assemble Spread the sauced macaroni in the dish and scatter the breadcrumb mixture evenly over the top.
5. 5
Bake Bake at 190°C / 375°F for 25–30 minutes, until the edges bubble and the top is deep golden. For an extra-crisp crust, finish 1–2 minutes under the broiler, watching closely.
6. 6
Rest and serve Let it rest 5–10 minutes so the sauce sets to a scoopable, creamy texture before serving.

Once the base is solid, the flavor directions are endless. Keep Colby Jack as the melt-and-body anchor and swap or add from there.
