Monterey Jack Cheese Recipe

Monterey Jack is one of the few genuinely American original cheeses. Franciscan monks at the Spanish missions around Monterey, California made a soft, semi-firm cheese they called queso del país — “country cheese” — and in the 1880s a Scottish-born landowner named David Jacks began selling it commercially. It shipped in crates stamped “Jacks’ cheese,” and the apostrophe eventually slid over to give us Monterey Jack.

In the vat it behaves like a mild cousin of cheddar and Gouda:

Good Jack starts with good milk. Use pasteurized whole milk — full-fat, ideally not homogenized if you can find it — from cow’s milk.

For roughly 8 litres (2 gallons) of milk you will need:

• Mesophilic culture — about ⅛ tsp of a direct-set mesophilic blend (e.g. MA 4001 or MM 100). Mesophilic cultures work at cheese-vat temperatures rather than the hotter thermophilic range.
• Calcium chloride — about 2 ml (½ tsp) of 30% solution, diluted in ¼ cup cool non-chlorinated water. This restores the calcium balance lost in pasteurization and cold storage, giving a firmer set. Skip it if you’re using fresh raw milk.
• Rennet — see the make-day section for dosing. Liquid, tablet, or powder all work; get the amount right for your exact milk volume.
• Cheese salt — non-iodized flake or fine cheese salt, plus enough for a brine if you brine rather than dry-salt.

Set aside about three hours of active time for the make, then pressing overnight. Sanitize everything that touches the milk first.

   Warm the milk Heat 8 L (2 gal) whole milk gently to 31–32°C (88–90°F), stirring so it heats evenly. Use a water bath or very low direct heat to avoid scorching.

   Add culture Sprinkle ⅛ tsp mesophilic culture over the surface, let it rehydrate for 2 minutes, then stir through with slow up-and-down strokes. Cover and ripen 45 minutes, holding the temperature.

   Add calcium chloride, then rennet Stir in the diluted calcium chloride. Wait a minute, then add your measured rennet diluted in ¼ cup cool water, stirring gently for no more than 1 minute. Stop the milk moving and cover.

   Let it set (~45 min) Leave undisturbed for about 45 minutes until you get a clean break — a knife slipped in at an angle lifts a clean split with clear whey. If it's still soft, give it another 10–15 minutes.

   Cut the curd (~1 cm) Cut the curd into roughly 1 cm (½ in) cubes and let them rest 5 minutes to firm at the edges.

   Cook to 38°C (100°F) Over about 30–40 minutes, raise the temperature slowly to 38°C (100°F) — no faster than ~2°C every 5 minutes — stirring often so curds don't mat. They'll shrink to pea-size and firm up.

   Wash the curd Let the curds settle, ladle off about a third of the whey, and replace it with the same volume of 38°C (100°F) water. Stir 15–20 minutes at temperature. This dilution is what makes Jack mild and springy.

   Drain Pour the curds into a cloth-lined colander and let the whey drain for 10–15 minutes until the mass holds together but is still warm and pliable.

   Salt or brine Either mill the warm curds and mix in about 2% salt by curd weight (roughly 2 tbsp for this batch), or press first and brine the finished wheel. For Pepper Jack, fold in chopped hot peppers now.

    Press Pack curds into a lined mold. Press at ~5 kg (10 lb) for 15 minutes, redress, then ~10 kg (25 lb) for 12 hours, and finally ~22 kg (50 lb) for another 12 hours for a closed rind.

    Air-dry, then wax or age Unwrap and air-dry the wheel on a mat at room temperature for 2–3 days, turning daily, until the surface is dry to the touch. Then wax it or move it straight to your aging space.

Dosing rennet by feel is where most home batches drift. Underdose and the set is soft and slow; overdose and you can get a bitter, chalky curd.

All four start from the same washed-curd make; what changes is how far you wash, what you add, and how long you age.

Jack is forgiving because it’s genuinely good young — but the same wheel becomes a completely different cheese if you hold it. Age at 10–13°C (50–55°F) and 80–85% humidity, turning weekly.

A young wheel keeps a few weeks in the fridge once cut. A waxed or well-rinded wheel destined for Dry Jack can be held for the better part of a year — just check monthly for unwanted surface mold and wipe with a brine-dampened cloth if needed.

Jack’s low acid and high moisture make it one of the great melting cheeses — it goes smooth and stretchy without splitting into oil. Reach for it in:

• Quesadillas and burritos — the classic pairing, since Jack’s mild flavor lets the fillings lead.
• Grilled cheese and toasties — often blended with a sharper cheese for balance.
• Nacho and queso blends — melts evenly and stays glossy.
• Melting over eggs, chili, or roasted vegetables — mild enough not to dominate.

Aged Dry Jack flips roles entirely: too hard to melt cleanly, it’s a grating and snacking cheese with a savory, brothy depth close to an aged Italian hard cheese.

Most Jack problems trace back to temperature control during the cook or acidity at pressing.

If a young wheel tastes flat, it’s often just under-aged — give it another two to three weeks at cellar temperature and the flavor will fill in.
