Milk is 87% water. The remaining 13% — fat, protein, sugar, and minerals — is everything your cheese will be made of. Choosing the right milk is the single most impactful decision in cheesemaking, more important than your culture, your rennet, or your technique. Get the milk right and the rest follows; get it wrong and no amount of skill can save the batch. This guide covers every type of milk you might encounter, what each one does to your cheese, and how to make the best choice for your project.
Milk by processing level
Whole pasteurized (recommended default) Standard store-bought milk heated to 72°C (161°F) for 15 seconds. The proteins are mostly intact, so it forms a clean curd with rennet. The most reliable, accessible option for home cheesemaking. Add calcium chloride for best results.
Raw (unpasteurized) Milk straight from the animal, not heat-treated. Contains native bacteria and enzymes that contribute to more complex flavor and firmer curd structure. Produces the best cheese by most cheesemakers' assessment. Requires a trusted source, good hygiene, and (for sale in the US) 60-day minimum aging. Legal for personal use in most states.
Ultra-pasteurized / UHT (avoid) Heated to 138°C (280°F) for 2-4 seconds. This denatures whey proteins and damages casein beyond recovery. It will NOT set into a firm curd with rennet. It is the most common reason home cheese batches fail. Check the carton — if it says "ultra-pasteurized" or has a shelf life of months, do not use it.
Vat pasteurized (ideal store-bought) Heated to 63°C (145°F) for 30 minutes — a gentler process that preserves more calcium and protein structure than standard HTST pasteurization. Produces better curd without calcium chloride. Found at some dairies and specialty stores. Worth seeking out.
Milk by animal
Cow milk The most common and versatile. Makes every type of cheese from cream cheese to Parmesan. Contains beta-carotene, which gives cheese its yellow color. Higher in casein than goat milk, producing a firmer, more elastic curd.
Goat milk Tangier, more aromatic, pure white (no beta-carotene). Smaller fat globules make the curd more delicate and softer. Classic for chevre, feta, Bucheron, and Valencay. The curd is more fragile — handle gently and consider slightly more rennet.
Sheep milk Richest of the three — nearly double the fat and protein of cow milk. Produces the highest yield per liter and a rich, buttery cheese. Classic for Roquefort, Pecorino, Manchego, and feta. Harder to find and more expensive, but the yield offsets the cost somewhat.
Buffalo milk Very high in fat and protein. The traditional milk for mozzarella di bufala. Produces exceptionally creamy, rich cheese. Available fresh from some specialty farms. Water buffalo milk, not bison.

Milk by fat level
Whole milk (3.25-4%) The standard for cheesemaking. The fat contributes flavor, creaminess, and yield. Always use whole milk unless a recipe specifically calls for lower fat.
Reduced fat / 2% Works but produces a drier, less flavorful cheese with lower yield. The curd can be more fragile. Add calcium chloride. Acceptable for fresh cheeses like paneer but not ideal for aged styles.
Skim / fat-free Produces very low-yield, dry, rubbery cheese. Not recommended for most styles. Historically used for cottage cheese and some farmstead cheeses where cream was skimmed off for butter. Always add calcium chloride.
Cream-enriched Adding cream to whole milk produces double- and triple-cream cheeses like Boursin, brie, and cream cheese. The extra fat makes the cheese richer and more spreadable.
Homogenized vs non-homogenized
Homogenization forces milk through tiny holes to break fat globules into smaller, uniform particles so the cream does not separate. Most store-bought milk is homogenized.
Homogenized (most store milk) Works fine for nearly all cheeses. The smaller fat globules can produce a slightly softer curd with slightly lower fat retention (some fat escapes into the whey). Calcium chloride compensates well.
Non-homogenized (cream-top) Fat globules are intact and larger, which means the curd traps more fat and the cheese has better flavor and yield. Non-homogenized milk is preferred by cheesemakers when available. Look for "cream-top" or "cream-line" on the label.
When and how to use calcium chloride
Pasteurization disrupts the calcium-casein bonds that hold curd together. Calcium chloride restores those bonds, giving you a firmer, cleaner-breaking curd.

When to use it With any pasteurized store-bought milk, especially HTST pasteurized. Also with goat milk and low-fat milk, both of which produce softer curds. Not needed with raw milk.

How much About 1/4 teaspoon (1.25 mL) of liquid calcium chloride per 4 L (1 gallon) of milk. Dissolve in 60 mL (1/4 cup) of cool unchlorinated water.

When to add it Add the diluted calcium chloride to the milk BEFORE adding rennet. Stir in gently. Wait 5 minutes, then add your culture and proceed with the recipe.
Milk-related problems
! Watch for- Milk won't set into a curd: Almost always ultra-pasteurized (UHT) milk. Check the carton. If it says ultra-pasteurized or has a shelf life of months, switch to standard pasteurized.
- Weak, mushy curd: Low calcium from pasteurization. Add calcium chloride. Also check that your rennet is not expired — rennet loses potency over time, especially if stored warm.
- Low yield: Low-fat milk or heavily homogenized milk loses more fat to the whey. Use whole, non-homogenized milk for best yield. Cream-top milk gives the highest yield.
- Off flavors: Milk that is close to its expiration date or has been stored too warm can develop off flavors that carry into the cheese. Use the freshest milk available.
