Every fermentation supply company wants to sell you a kit with a dozen items, half of which you will never use. The truth is simpler: the oldest fermented foods on Earth were made in clay pots with rocks on top. Modern equipment is better than rocks and clay, but the principle has not changed. You need a vessel, something to keep food submerged, and salt.
This guide covers the jars, weights, lids, and kits that are actually worth buying, what you can skip, and how to set up a mason jar for your first vegetable ferment.
Mason jars: the default choice
Wide-mouth mason jars are the most popular fermentation vessel for home use, and for good reason. They are inexpensive, widely available, dishwasher-safe, and sized right for small to medium batches.

The wide mouth is not optional. Regular-mouth mason jars have an opening too narrow to pack vegetables, insert a weight, or clean properly. Wide-mouth jars accept standard fermentation weights, airlock lids, and spring-loaded tampers. Every fermentation accessory on the market is designed to fit a wide-mouth mason jar.
Quart jars The best starting size. A quart jar holds about one pound of sliced vegetables, enough for a batch of pickles, a small sauerkraut, or a jar of fermented hot sauce. Small enough that a failed batch is not a big loss. Fits easily on a counter or in a cabinet.
Half-gallon jars The right size when you want a full batch of sauerkraut or kimchi. A half-gallon jar holds roughly one medium head of cabbage. These jars are tall, so confirm they fit under your airlock lid with clearance on whatever shelf you plan to use. The wider base also makes them more stable than a quart jar stacked with a weight and lid.
Pint jars Too small for most fermentation projects. The narrow interior makes it hard to pack vegetables and nearly impossible to fit a standard fermentation weight. Useful only for very small test batches or for storing finished ferments in the fridge.
! Watch for- Inspect every jar before use. Run your finger around the rim. A chip or crack in the glass can prevent a proper seal with an airlock lid and can cut your hand during packing.
- Do not use antique or decorative mason jars for fermentation. Older jars may have lead content in the glass or glaze. Stick to modern, food-grade jars from reputable manufacturers.
Fido-style (bail-wire) jars
Fido-style jars, sometimes called bail-wire or swing-top jars, have a glass lid held in place by a metal wire clamp with a rubber gasket. They are a step up from mason jars in both aesthetics and function.
How they work for fermentation The rubber gasket creates a seal that is tight enough to hold the lid in place but loose enough to let CO2 escape when pressure builds. During active fermentation, you will hear a soft hiss as gas vents past the gasket. This self-burping behavior means you do not need an airlock lid or daily burping.
Advantages over mason jars No separate airlock lid needed. The self-venting gasket handles CO2 release automatically. The glass lid lets you see the ferment without opening it. The clamp closure is faster than screwing a two-piece mason jar lid on and off. They look good enough to leave on the counter.
Disadvantages More expensive than mason jars. Standard fermentation weights may not fit the opening, depending on the brand and size. The rubber gasket wears out over time and needs replacement every 1-2 years with regular use. Not as widely available in rural areas as mason jars.
Fido-style jars in the 1 to 2 liter range work well for vegetable ferments. If you plan to buy one, measure the interior mouth diameter and confirm that your fermentation weights will fit before purchasing.
Specialized fermentation jars and crocks
Beyond mason jars and Fido jars, there are vessels designed from the ground up for fermentation. These range from mason jar lids with built-in airlocks to large ceramic crocks.
Mason jar airlock lid systems These are plastic or silicone lids that fit a standard wide-mouth mason jar and include a built-in airlock or one-way silicone valve. They turn any mason jar into a self-venting fermentation vessel. Some use a traditional three-piece airlock inserted into a drilled lid. Others use a molded silicone valve that opens under pressure and closes when pressure drops. Both work. The silicone valve type is easier to clean and store.
Water-seal fermentation crocks Traditional ceramic crocks with a moat around the rim that you fill with water. The lid sits in the moat, creating a water seal that lets CO2 bubble out while preventing air from getting in. These are the gold standard for large-batch sauerkraut and kimchi. They hold 2 to 10 liters, keep light out (which preserves color and nutrients), and maintain a stable temperature due to the thick ceramic walls. The downsides are weight, price, and storage space.
Glass fermentation jars with airlock lids Purpose-built glass jars that come with an airlock lid, a weight, and sometimes a tamper. These are essentially a mason jar, weight, and airlock lid sold as a single unit. The convenience is that everything fits together out of the box. The downside is that proprietary sizes may not accept standard accessories from other brands.
Open ceramic crocks Traditional open crocks without a water seal. Used with a plate or wooden disc as a weight and a cloth cover. These are the oldest style of fermentation vessel and still work perfectly for sauerkraut and kimchi when paired with a heavy weight. They require more monitoring for surface mold and kahm yeast than sealed systems.
When a crock makes sense If you make sauerkraut or kimchi in batches of a gallon or more, a water-seal crock pays for itself in convenience. Packing a large crock is easier than splitting a big batch across multiple mason jars. The thick walls buffer temperature swings, and the water seal is maintenance-free once filled.
When a crock is overkill For occasional fermenters, small batches, or anyone short on storage space. A quart mason jar with an airlock lid produces the same result as a crock for small batches. Crocks weigh 5 to 15 pounds empty, and the largest ones are awkward to move when full.
Fermentation weights
A fermentation weight keeps your vegetables submerged below the brine. This is the single most important accessory you can buy. Vegetables exposed to air above the brine line will grow mold, develop kahm yeast, or spoil. Submerged vegetables stay safe.
Glass weights Solid glass discs or half-moon shapes designed to fit inside a wide-mouth mason jar. Glass is non-porous, easy to sanitize, and does not absorb flavors or odors. Half-moon weights (two pieces that fit together) are easier to insert and remove than a single disc. Glass is the most popular material for mason jar fermentation.
Ceramic weights Glazed ceramic weights are common with fermentation crocks. They are heavier than glass, which is an advantage for keeping dense vegetables like carrots and beets submerged. Make sure the glaze is food-safe and lead-free. Unglazed ceramic is porous and can harbor bacteria between uses.
Silicone weights and inserts Flexible silicone discs that press down into the jar and conform to the interior shape. Some have a tab for easy removal. They work but tend to float more than glass or ceramic. Some designs include a built-in moat that fills with brine and adds weight. Less durable over the long term as silicone can tear or degrade.
Improvised weights that work A zip-lock bag filled with brine (not plain water, in case it leaks). A smaller jar filled with water and nested inside the fermenting jar. A food-grade plate weighed down with a clean rock. A cabbage leaf folded over the top of the vegetables with a weight on top of the leaf. All of these work. None are as convenient as a purpose-made weight, but they cost nothing.
What to avoid as a weight Metal objects (they corrode in acidic brine). Painted or glazed ceramics from unknown sources (potential lead contamination). River rocks or garden stones (may contain bacteria or contaminants). Plastic containers not rated food-safe. Anything that could react with the salt and acid in fermentation brine.
The minimum viable setup
You can start fermenting vegetables today with three things you probably already have. No kit, no specialty equipment, no online order.

A wide-mouth jar Any clean glass jar with a wide opening. A mason jar is ideal, but a repurposed pasta sauce jar or pickle jar works in a pinch. The mouth needs to be wide enough for your hand or a spoon to pack vegetables tightly.

Salt Non-iodized salt. Sea salt, kosher salt, pickling salt, or pink Himalayan salt all work. Iodized table salt can inhibit the lactobacillus bacteria that drive fermentation. If the only salt in your kitchen is iodized table salt, it will still work in most cases, but non-iodized is better.

Something to keep vegetables submerged A zip-lock bag filled with brine, a smaller jar, or a cabbage leaf pressed down with a clean rock. The method does not matter. The principle does: everything below the brine stays safe, everything above it is at risk.
Sauerkraut with this setup Slice a head of cabbage thinly. Sprinkle with 2% of its weight in salt (about 1 tablespoon per pound). Massage the cabbage until it releases liquid. Pack it tightly into a wide-mouth jar. Push down until the brine rises above the cabbage. Place your improvised weight on top. Cover loosely with a cloth or unscrew the lid a quarter turn. Ferment at room temperature for 1 to 4 weeks, tasting as you go.
When to upgrade If you enjoy your first batch, buy a glass weight and an airlock lid for your mason jar. This is the step-by-step process for turning a wide-mouth mason jar into a fermentation vessel using an airlock lid and glass weight.

Clean everything Wash the jar, lid, and weight with hot soapy water and rinse thoroughly. You do not need to sterilize with boiling water or sanitizer for vegetable fermentation. The salt and acidity of lacto-fermentation create a hostile environment for harmful bacteria. Hot soapy water is sufficient.

Prepare your vegetables Slice, shred, or chop your vegetables. For dry-salt ferments (sauerkraut, kimchi), toss the vegetables with 2 to 3% of their weight in salt and massage until they release liquid. For brine ferments (whole pickles, carrot sticks), prepare a brine at 3 to 5% salt concentration and pour it over the packed vegetables.

Ferment Place the jar on a plate or in a bowl (to catch any overflow during active fermentation) in a spot out of direct sunlight. Room temperature, 65 to 75 degrees Fahrenheit (18 to 24 degrees Celsius), is ideal for most vegetable ferments. Taste after 3 to 5 days and continue fermenting until you like the flavor.
! Watch for- Do not pack the jar to the brim. Active fermentation produces CO2 bubbles that push the brine level up. Without headspace, brine will overflow through the airlock or around the lid.
- If you see mold on the surface, remove it along with any vegetables it has touched. Mold grows above the brine line, not below it. This is why keeping everything submerged matters.
- Label each jar with the contents and the date. After a few batches, you will have multiple jars fermenting at different stages, and they all look the same through the glass.
Starter kit categories
Starter kits bundle equipment and sometimes ingredients into a single purchase. Some are good value. Others are a jar with $30 of marketing wrapped around it. Here is what to look for in each category.
Vegetable fermentation kits A good vegetable fermentation kit includes a wide-mouth jar, a glass or ceramic weight, and an airlock lid. Some include a tamper or pounder for packing vegetables. This is the most useful kit category because the components are things you will actually use for every batch. Avoid kits that substitute a plastic bag or spring for a proper weight, or that include a standard mason jar lid instead of an airlock lid.
Kombucha starter kits A kombucha kit should include a live SCOBY (symbiotic culture of bacteria and yeast) and starter liquid. The SCOBY is the one component you cannot substitute with a trip to the hardware store. Better kits also include a brewing vessel (usually a gallon glass jar), a breathable cover (cloth or coffee filter), a rubber band, and pH strips. The vessel and cover are easy to source yourself, so the value of the kit depends almost entirely on the quality of the SCOBY.
Kefir starter kits Kefir kits come in two forms: live kefir grains or powdered freeze-dried starter culture. Live grains are reusable indefinitely, since they grow and multiply with each batch. Powdered starter is single-use or limited to a few batches before the culture weakens. A kit with live grains is a better long-term investment. The rest of the kit (a jar, a strainer, a cloth cover) is household items you already own.
Sourdough starter kits Some sourdough kits include a live dehydrated starter culture, a jar, a lame (scoring blade), and a banneton (proofing basket). The live starter saves you the 7 to 14 days needed to cultivate one from scratch, which is the main selling point. If you are patient enough to build a starter from flour and water (and most people are), the only items worth buying from a kit are the banneton and lame, which are harder to improvise.
What makes a kit worth buying The kit saves you time sourcing individual items, and the total cost is less than or equal to buying the components separately. The components are things you will reuse for many batches, not single-use packets or disposable accessories. For culture-based kits (kombucha, kefir), the live culture is the item that justifies the kit price.
What makes a kit a waste of money Kits padded with items you already have (measuring spoons, cheesecloth, printed recipe cards). Kits that charge a premium for branding and packaging rather than quality components. Kits with proprietary jar sizes that do not accept standard accessories. Any kit priced more than twice what the individual components would cost.
Necessary vs. nice to have
This is the honest breakdown. Everything on the left column gets you fermenting. Everything on the right column makes it easier or more consistent, but you can produce great fermented food without any of it.

A tamper (easier packing). pH strips (objective confirmation of acidity). These save time and reduce guesswork, but they do not change the outcome of a well-made ferment.
What you can skip entirely Fermentation heating mats (unless your kitchen is below 60 degrees Fahrenheit regularly). Specialized fermentation thermometers (a regular kitchen thermometer works). Decorative crocks that are not food-safe. UV-blocking jar covers (just keep the jar out of direct sunlight). Single-use spice packets or pre-mixed seasoning blends included in kits.
Choosing the right gear for your ferment type
Different fermentation projects benefit from different equipment. Here is what works best for the most common home ferments.
Sauerkraut and kimchi A wide-mouth mason jar (half-gallon for full batches) or a water-seal crock. A glass weight. An airlock lid for the mason jar option. A mandoline speeds up cabbage shredding. A tamper helps pack the jar. These two ferments are the easiest to start and the most forgiving of improvised equipment.
Brine pickles (cucumbers, carrots, green beans) A wide-mouth quart mason jar with an airlock lid and a glass weight. The vegetables sit in liquid brine rather than being dry-salted, so the weight must be heavy enough to keep buoyant vegetables submerged. Glass weights work better than silicone inserts for this purpose because they are heavier.
Kombucha A wide-mouth gallon glass jar (not a mason jar, since kombucha batches are typically a gallon). A tightly woven cloth cover secured with a rubber band. A SCOBY and starter liquid. Bottles with swing-top caps for second fermentation and carbonation. A pH strip to verify acidity. Kombucha does not use an airlock because the SCOBY needs air contact.
Kefir (milk or water) A clean glass jar (quart size). Live kefir grains. The setup is minimal because kefir is one of the simplest ferments to maintain.

Fermentation equipment lasts for years with basic care. Glass and ceramic are the easiest materials to maintain because they are non-porous and do not absorb flavors or odors.

After each batch Wash jars, weights, and lids with hot soapy water. Rinse thoroughly. Check rubber gaskets (on Fido jars and some airlock lids) for cracks, discoloration, or lingering odors. Air dry completely before storing.

- Replace rubber gaskets on Fido-style jars and airlock lids every 1 to 2 years with regular use. A worn gasket leaks CO2 around the seal instead of through the airlock, defeating the purpose.
- Never use bleach on fermentation equipment. Bleach residue is difficult to remove completely and can kill the beneficial bacteria that drive fermentation. Hot soapy water and occasional vinegar soaks are all you need.
