Finished mead does not have to be still. Carbonation adds texture and lifts aromatics, turning a flat honey wine into something closer to sparkling cider or champagne. The trick is getting the bubbles in without getting bottle bombs, flat results, or off-flavors from rushing the process.
Three ways to carbonate mead
Every carbonation method puts dissolved CO2 into a sealed vessel. What changes is how you get the CO2 there and how much control you have over the final level.
Still, petillant, and sparkling
Mead carbonation falls into three broad tiers. The BJCP defines them qualitatively by bubble character rather than fixed CO2 numbers, but approximate volumes help when using a priming calculator or setting keg pressure.
Higher carbonation means higher bottle pressure, which means stronger bottles and more precise priming. If you are carbonating for the first time, petillant is a forgiving starting point.
Before you carbonate: confirm fermentation is done
This step matters more than any other. If fermentation is not truly finished when you seal the vessel, leftover sugar will ferment on top of your priming dose and the pressure can exceed what the bottle can hold.
- 1Take a gravity reading Record the specific gravity with a hydrometer.
- 2Re-read in 3 days Take a second reading. If gravity has not moved, fermentation is done.
- 3Confirm again if unsure A full week of stable readings is safer, especially for high-gravity meads.

Bottle conditioning with priming sugar
Bottle conditioning is the most accessible method. You dissolve a measured amount of sugar in a small volume of boiled water, gently stir it into the finished mead, then bottle and cap. The small population of yeast still in suspension ferments that sugar in the sealed bottle and produces CO2.
If you plan to backsweeten before bottling, stabilize first with potassium sorbate and potassium metabisulfite. If the mead is stabilized, the remaining yeast population may be too small to carbonate the priming sugar, so bottle conditioning and backsweetening do not always pair well. Force carbonation handles that case better.
Force carbonation in a keg
Force carbonation bypasses yeast entirely. Finished mead goes into a sanitized Corny keg, the headspace is purged with CO2, and the regulator is set to the target pressure based on a pressure-temperature chart for the desired CO2 volumes.
The main advantage is precision and safety: you set exactly the CO2 level you want and there is no risk of bottle bombs. The tradeoff is the cost of a keg, CO2 tank, regulator, and serving lines.
Common carbonation mistakes
- Bottling before fermentation is fully finished — the leading cause of bottle bombs
- Backsweetening with honey or conditioner without stabilizing first — yeast can restart months later
- Overdosing priming sugar or guessing amounts instead of using a calculator
- Using standard still-wine bottles for carbonated mead — they are not pressure-rated
- Skipping the gravity-stability check and relying on the airlock slowing down as proof of completion
