A ginger bug is to homemade soda what a starter is to sourdough: a jar of wild yeasts and lactic acid bacteria, caught from the skin of fresh ginger and fed with sugar until it is lively enough to carbonate a drink. Once you have one, ginger beer, lemonade, root beer and fruit sodas are a few days away.
How to start a ginger bug
- 1Day 1 In a clean jar, stir together 2 tablespoons of finely grated unpeeled ginger, 2 tablespoons of white or raw cane sugar and 2 cups of filtered or boiled-and-cooled water. Cover with a cloth and a rubber band.
- 2Days 2–5 Every day, add 1 tablespoon of grated ginger and 1 tablespoon of sugar, and stir well. Stirring adds air and spreads the yeast.
- 3Watch for bubbles Small bubbles at the edges appear first, then a fizzy rush when you stir. The smell turns from raw ginger to yeasty and slightly sour.
- 4Ready When it fizzes vigorously within a few hours of a feeding, usually around day 3–7, it is ready to use.
Using a ginger bug
Strain off the liquid you need and add it to a cooled, sweetened soda base: about 1/4 cup per quart (60 mL per litre), or up to 10% of the batch for a faster start. Bottle, leave at room temperature for 1–4 days until fizzy, then refrigerate.
Replace what you took with fresh water, and feed the bug a tablespoon each of ginger and sugar so it is ready for next time. Every few weeks, strain out some of the spent ginger so the jar does not fill with pulp.

Troubleshooting
Watch for
- No bubbles after a week Too cold, chlorinated water, or treated ginger. Fix all three before giving up.
- Fuzzy mould on the surface Discard it and start again in a clean jar, stirring daily so nothing sits on top.
- Flat white film Kahm yeast. Skim it, stir and feed. It is harmless but means the bug wants more stirring.
- Smells strongly of alcohol or nail polish It is hungry. Feed it, or pour off some liquid and top up with water.
- Sodas come out flat Use the bug at its most active, a few hours after feeding, and see the bottle times in the calculator.
