Bread flour and all purpose flour come from the same wheat plant. The difference is protein content — bread flour has more, which means stronger gluten, which means chewier bread. That one number, protein percentage, drives every practical difference between the two.
The protein difference
Protein content determines how much gluten the flour can form. More gluten means a stronger, more elastic dough that traps gas well and gives bread its chew and structure. Less gluten means a softer, more tender crumb — which is what you want in a cake or pastry.

For sourdough specifically
Most sourdough recipes default to bread flour, and for good reason: the stronger gluten gives better oven spring, a more open crumb, and a loaf that holds its shape. But all purpose flour makes perfectly good sourdough — it just behaves differently.
Protein content by brand
Not all “all purpose” flour is created equal. Protein content varies by brand, region, and wheat variety.
Watch for
- Southern US brands (White Lily, Martha White) can be as low as 8–9% protein — closer to pastry flour than true AP.
- Northern US brands (King Arthur, Gold Medal) run 10.5–11.7% protein — significantly stronger.
- If your "all purpose" loaves are flat and dense, check the protein content — you may need to switch brands or use bread flour.
To check any flour: look at the nutrition label, divide protein grams by the serving size in grams, and multiply by 100. That gives you the protein percentage.
