Evaporated milk is one of those pantry staples that fermenters keep asking about — can it make cheese? yogurt? kefir? The answer depends on the project. Evaporated milk is real milk with 60% of the water boiled off, then sterilized at high temperature in the can. That sterilization is the catch: it changes the protein structure in ways that help some fermentation projects (yogurt gets thicker) and hurt others (rennet cheeses will not set cleanly). What evaporated milk is
Evaporated milk is made by heating whole milk under vacuum to evaporate about 60% of the water, then homogenizing and sterilizing the concentrated liquid at 115-120°C (239-248°F) in the sealed can. The result is a thick, slightly caramelized liquid with about 7.5% fat and 6.5% protein (vs 3.5% fat and 3.3% protein in regular milk). It is unsweetened and shelf-stable for months.
The high sterilization temperature is the key factor for fermentation: it denatures essentially all of the whey proteins and significantly alters the casein micelle structure. This is even more extreme than ultra-pasteurization (UHT), which heats to 138°C for 2-4 seconds. Evaporated milk is heated longer and at a similarly extreme temperature.
Evaporated milk for yogurt
Evaporated milk makes excellent yogurt — the concentrated proteins produce a naturally thick, rich product without straining.
- 1Prepare the milk Use evaporated milk straight from the can for the richest result, or dilute with an equal part water for a consistency closer to regular yogurt. One 354 mL (12 oz) can makes about 350 mL of thick yogurt or 700 mL of regular-thickness yogurt.
- 2Heat Heat to 82°C (180°F) and hold for 5 minutes. This step is shorter than usual because the milk is already sterilized — you are just ensuring the right temperature for protein rearrangement.
- 3Cool and inoculate Cool to 43°C (110°F). Stir in 1-2 tablespoons of plain yogurt with live cultures (or a yogurt starter culture packet).
- 4Ferment Hold at 43°C for 6-12 hours in a yogurt maker, oven with the light on, or insulated container. The yogurt will set thick and creamy.
The result is noticeably richer and thicker than yogurt made from regular milk. The slight caramel flavor from the evaporated milk can be pleasant, especially in vanilla or fruit yogurts.

Tips for using evaporated milk
- Dilute for a closer-to-fresh result: Mix 1 part evaporated milk with 1 part water to approximate whole milk's concentration. Use full-strength only when you want extra richness.
- Do not confuse with sweetened condensed: Read the label. Sweetened condensed milk will ruin any fermentation project. Evaporated milk is always unsweetened.
- Accept the caramel flavor: The sterilization process gives evaporated milk a slight cooked, caramelized taste. This works well in yogurt and cheese sauces but can be noticeable in mild, fresh cheeses.
- Store opened cans carefully: Once opened, evaporated milk spoils faster than regular milk because of its concentrated nutrients. Transfer to a sealed container and use within 3-5 days, or freeze in ice cube trays.
