Farmer’s cheese is a fresh, unaged cheese made by curdling warm milk with an acid and draining off the whey. It is one of the fastest cheeses you can make: no starter culture, no rennet, no aging, and no special equipment beyond a pot and a piece of cheesecloth. Firmness is entirely in your hands, set by how hard and how long you drain the curds. You will see it written as farmer cheese, farmer’s cheese, or farmers cheese, and they all mean the same thing.
What farmer's cheese actually is
The name covers a family of simple fresh cheeses made on farms from whatever milk was on hand. What they share is the method rather than a single recipe: milk is acidified until the proteins clump into curds, the curds are drained, and the result is eaten fresh.
Because it is drained firmer than cottage cheese but kept softer and moister than paneer, farmer’s cheese sits in the middle of the fresh-cheese family. It crumbles over a salad, spreads on bread, slices for a pan, and takes salt, herbs, or garlic well.
How the milk turns into cheese
Milk protein (mostly casein) stays suspended while milk is neutral and cold. Add heat and acid and that changes. The acid lowers the pH toward casein’s isoelectric point (around pH 4.6), the proteins lose their charge, and they bind together into a solid curd, trapping fat as they go. The leftover liquid is whey.
This is the same acid-set principle behind paneer, queso blanco, and quick ricotta. It is different from the rennet set used for cheddar and most aged cheeses, where an enzyme rather than acid does the coagulating.

The method, step by step
- 1Heat the milk Pour 2 L of whole milk into a heavy pot. Warm it slowly over medium heat, stirring often so it does not catch, until it reaches 85-88°C (185-190°F). It should steam and just begin to foam, not boil hard.
- 2Add the acid Take the pot off the heat. Stir in 60 mL (1/4 cup) of lemon juice or vinegar. Within a minute you should see white curds pulling away from clear, yellowish-green whey. If the whey still looks milky, add acid a tablespoon at a time and stir gently until it runs clear.
- 3Rest Let the pot sit undisturbed for 10-15 minutes. The curds finish gathering and firm up slightly.
- 4Drain Ladle or pour the curds into a cheesecloth-lined colander set over a bowl. Let the bulk of the whey run off.
- 5Salt and shape Sprinkle salt over the curds and fold gently to distribute. Gather the cloth and squeeze out more whey for a firmer cheese, or leave it looser for a soft, crumbly one.
- 6Set the firmness For soft farmer's cheese, drain 30 minutes and use. For a sliceable block, tie the cloth and press under a weight (a plate topped with a full jar) for 1-3 hours in the fridge.
This yields roughly 300-400g of cheese from 2 L of whole milk. Use it within a week.
Controlling firmness
Firmness is not a separate recipe, just a matter of moisture. The longer and harder you drain and press, the drier and more sliceable the cheese.
When it goes wrong
- Milk will not curdle — usually too cool, too little acid, or ultra-pasteurised milk. Reheat to 88°C and add more acid until the whey runs clear.
- Rubbery, squeaky curds — the milk was boiled too hard or held too hot for too long. Pull it off the heat as soon as it reaches temperature.
- Tiny, gritty curds that slip through the cloth — often from adding acid while stirring vigorously. Stir gently and let the curds gather before draining.
- Sour or harsh flavour — too much acid. Use just enough to separate the curds, and rinse the curds briefly with cool water if the taste is sharp.
