Milk Kefir Grains: What They Are and How to Use Them

Milk kefir grains are a living culture of bacteria and yeast that turn milk into kefir. Learn what they are, how to use and care for them, the grain-to-milk ratio, how they grow, storing them, and why they aren't interchangeable with water kefir grains.

Milk kefir grains are the engine of milk kefir: a living, reusable culture that ferments plain milk into a tangy, fizzy, probiotic drink and then does it again the next day, indefinitely. Once you understand what they are and how to keep them happy, kefir becomes the lowest-effort ferment in the kitchen. Add grains to milk, wait a day, strain, repeat.

What milk kefir grains are

Despite the name, kefir grains are not seeds or cereal. They are a symbiotic community of bacteria and yeast bound together in kefiran, a gel-like polysaccharide the culture produces itself. The clusters look and feel like small, soft, rubbery pieces of cauliflower, from rice-grain size up to a thumbnail.

How to use them

The basic cycle never changes: grains in milk, wait, strain, put the grains in fresh milk.

    Combine Put about 1-2 tablespoons of grains into a clean glass jar and add 500 mL of milk. Leave headroom — the mix expands.

    Cover and wait Cover with a cloth or loose lid and leave at room temperature (18-25°C / 65-77°F), out of direct sun, for 12-48 hours.

    Judge the finish The kefir is ready when it has thickened, smells tangy, and may show a little whey separation. Taste it — strain earlier for a milder drink, later for a sour, fizzy one.

    Strain Pour through a plastic or stainless steel sieve into a clean jar. The grains stay behind. The liquid is your kefir, ready to drink or flavour.

    Repeat Drop the grains straight into fresh milk and start the next batch. No rinsing needed between batches.

Grain ratio and timing

The balance of grains to milk sets how fast the batch ferments and how sour it gets. There is a workable range rather than one right number, because it depends on temperature and taste.

More grains or a warmer room means a faster, more sour batch. Fewer grains or a cool room means a slower, milder one. As the grains multiply you will naturally shift the ratio, so treat the numbers as a base to adjust from.

Kefir grains to milk ratio by volume. The table below scales the same 1–2 tablespoons per 500 mL to the common batch sizes, in both tablespoons and grams (roughly 1 tablespoon of grains ≈ 15 g). Start toward the lower end and add grains if batches finish too slowly.

How the grains grow

Healthy grains multiply. Fed fresh whole milk at comfortable room temperature, they gain roughly 5-20% in mass per week, and eventually you have more than one jar of milk can keep up with.

Growing well grains gaining size, kefir finishing on schedule, clean tangy smell. Scale up your milk or share the surplus.
Holding steady no obvious growth but kefir still setting. Common in cooler rooms or lower-fat milk — usually fine.
Shrinking or sluggish grains getting smaller, batches slow or thin. A sign of cold, low-fat milk, chlorine, or metal stress — feed fresh whole milk daily to rebuild.
Too many grains batches souring in a few hours. Remove and give away, dry, or freeze the excess to bring the ratio back.

Caring for your grains

Grains are forgiving, but a few habits keep them thriving.

Feed whole dairy milk Cow, goat, or sheep milk all work. Whole milk grows grains best. Plant milks and lactose-free milk make a drink for a few batches but starve the grains over time — return them to dairy to feed.
Avoid reactive metal Use glass, plastic, or stainless steel. Prolonged contact with aluminium or other reactive metals can harm the culture.
Mind the water If you rinse grains (you rarely need to), use unchlorinated water. Chlorine damages the bacteria and yeast.
Keep it clean, not sterile Clean jars and utensils protect the culture, but the grains do not need to be washed between batches. Over-rinsing removes the beneficial biofilm and slows them down.

Storing and taking breaks

You do not have to make kefir every day forever. Match the storage to how long you need off.

    Short break (up to 2 weeks) Put the grains in fresh milk in a jar in the fridge. The cold slows them so they only need fresh milk every 1-2 weeks.

    Medium break (weeks to a couple of months) Dry the grains: rinse lightly, pat dry, and leave on a clean cloth at room temperature until hard and yellowish, then store in a little powdered milk in the fridge.

    Long break (months) Freeze the grains dry in an airtight bag. Frozen grains keep for months, though they take several feeds to wake up fully.

    Reviving Whether from fridge, dried, or frozen, put the grains in fresh whole milk at room temperature and feed daily. Expect 2-5 cycles before they ferment on their normal schedule again.

Why milk grains aren't water grains

Milk kefir grains and water kefir grains are two different cultures. Milk grains are adapted to lactose in dairy; water grains are adapted to sucrose in sugar water. They look different — milk grains are soft and white, water grains are translucent and crystal-like — and neither survives long in the other’s food.

! Watch for
  • Do not try to convert milk grains to water kefir, or vice versa. The wrong medium starves and eventually kills them.

What are milk kefir grains made of?+

They are a symbiotic culture of bacteria and yeast (a SCOBY) held together in a matrix of kefiran, a polysaccharide the bacteria produce, along with milk proteins. The result is a soft, rubbery, cauliflower-like cluster ranging from the size of a grain of rice to a small floret. They are not grains in the cereal sense and contain no gluten.

How many kefir grains do I need per litre of milk?+

A rough starting point is 1-2 tablespoons of grains per 500 mL of milk, so 2-4 tablespoons per litre. More grains ferment faster and can over-sour; fewer grains ferment slower. Because grains multiply, you will keep adjusting — as they grow, either scale up the milk or give some away.

How many kefir grains per cup of milk?+

Can I use milk kefir grains to make water kefir?+

No. Milk kefir grains and water kefir grains are different cultures adapted to different foods. Milk grains feed on lactose in dairy; water grains feed on sucrose in sugar water. Put one in the other's medium and it will slowly weaken and die. Keep them separate.

Why are my kefir grains not growing?+

Grains multiply fastest in fresh whole dairy milk at comfortable room temperature. Slow or no growth usually means the milk is too low in fat or lactose (plant milks and lactose-free milk do not feed the grains long term), the room is too cold, chlorinated water or metal contact has stressed them, or they simply need a few cycles to settle after shipping. Feed fresh whole milk daily and they usually recover.

Do I have to make kefir every day?+

When the grains are active at room temperature, yes — they need fresh milk roughly every 24-48 hours. If you need a break, put the grains in fresh milk in the fridge, where the cold slows them so they only need feeding every 1-2 weeks. For longer breaks you can dry or freeze them.
