The poke test is the single most reliable way to tell when sourdough is ready to bake. It reads the actual state of the dough instead of relying on a timer, which is why experienced bakers trust it over any fixed number of hours. This guide covers what the test is, how to do it properly, what the spring-back tells you, and how the reading changes between bulk fermentation and the final proof.
What the sourdough poke test is
The poke test is a quick physical check: you press a floured finger into the dough and read how the dent recovers. Fermentation fills the dough with gas and, at the same time, gradually weakens the gluten that holds that gas. The way the surface springs back tracks exactly where the dough sits on that curve, so a single poke tells you whether it is underproofed, ready, or gone too far.
It works because it measures the two things that matter for a good bake at once: how much gas is in the dough and how much structure is left to hold it. No clock can read both.
How to do the poke test
The test takes about five seconds. The only skill is doing it gently and reading the recovery honestly.
- 1Flour a fingertip Lightly flour one finger so it does not stick to and tear the dough surface.
- 2Press about 1 cm deep Push gently into the side of the shaped loaf, then pull straight back out.
- 3Watch the dent recover How quickly and how far the indent springs back tells you the proof stage.
Poke the side of the loaf rather than the top. The top is the surface you will score, and a dent there can affect the final look and oven spring.
Reading the spring-back
There are three readings, and each one points to a clear next step.
Combine the poke with a visual check. A ready loaf looks noticeably puffed, has grown by roughly 30 to 50 percent, and jiggles slightly when the basket is nudged.

Underproofed vs overproofed at a glance
The poke test is really a way of catching the two failure modes before the oven does. When in doubt, err slightly toward underproofing, because a slightly underproofed loaf still springs and bakes well, while an overproofed one rarely recovers.

Poke test during bulk vs final proof
The poke test is most precise on a shaped, tensioned loaf during the final proof. During bulk fermentation the dough is a relaxed mass without that surface tension, so the same poke reads much more loosely.

Using the poke test on any bread dough
The poke test is not unique to sourdough. It works for any yeasted bread dough, including commercial-yeast loaves, enriched doughs, and pizza. The reading is identical: slow, partial spring-back means ready, fast full spring-back means underproofed, and no recovery means overproofed.
The one adjustment is speed. Commercial yeast ferments faster than a sourdough starter, so a yeasted dough reaches the ready reading sooner and can slip into overproofing quickly. Check it earlier and more often than you would a sourdough loaf.
