The poke test is a quick physical check: you press a floured finger into the dough and read how the dent recovers. Fermentation fills the dough with gas and, at the same time, gradually weakens the gluten that holds that gas. The way the surface springs back tracks exactly where the dough sits on that curve, so a single poke tells you whether it is underproofed, ready, or gone too far.
It works because it measures the two things that matter for a good bake at once: how much gas is in the dough and how much structure is left to hold it. No clock can read both.
How to do the poke test
The test takes about five seconds. The only skill is doing it gently and reading the recovery honestly.

Using the poke test on any bread dough
The poke test is not unique to sourdough. It works for any yeasted bread dough, including commercial-yeast loaves, enriched doughs, and pizza. The reading is identical: slow, partial spring-back means ready, fast full spring-back means underproofed, and no recovery means overproofed.
